【摘要】:水產(chǎn)品因?yàn)樗臓I(yíng)養(yǎng)價(jià)值被人們逐步深刻地認(rèn)識(shí),使得其市場(chǎng)和消費(fèi)群體逐步擴(kuò)大,需求量逐年增加,水產(chǎn)業(yè)的發(fā)展關(guān)乎著各國(guó)人民飲食結(jié)構(gòu)和營(yíng)養(yǎng)水平,世界上約有10億左右的人口依賴水產(chǎn)品來攝取生命所需的動(dòng)物蛋白質(zhì),在我國(guó)水產(chǎn)品已經(jīng)占到家庭飲食結(jié)構(gòu)的11%左右,我國(guó)地域廣闊,不同地區(qū)在自然資源稟賦、經(jīng)濟(jì)發(fā)展水平和文化習(xí)俗等方面存在明顯的差異,并因此導(dǎo)致了水產(chǎn)品消費(fèi)水平和消費(fèi)特征的區(qū)域性差異,本文從區(qū)域角度出發(fā),在對(duì)全國(guó)、東部地區(qū)、中部地區(qū)、西部地區(qū)水產(chǎn)品生產(chǎn)情況、消費(fèi)情況進(jìn)行對(duì)比分析的基礎(chǔ)上,對(duì)不同區(qū)域居民水產(chǎn)品消費(fèi)水平以及包括購(gòu)買傾向、消費(fèi)種類、消費(fèi)形態(tài)、消費(fèi)場(chǎng)所、購(gòu)買場(chǎng)所等消費(fèi)特征存在的差異進(jìn)行了比較分析,并以此為基礎(chǔ),有針對(duì)性地提出了提高不同地區(qū)居民水產(chǎn)品消費(fèi)水平的對(duì)策。本文以東部(上海)地區(qū)、中部(北京)地區(qū)、西部(西安)地區(qū)水產(chǎn)品消費(fèi)為研究對(duì)象,通過開展實(shí)地調(diào)研獲取一手?jǐn)?shù)據(jù),運(yùn)用數(shù)理統(tǒng)計(jì)方法、建立計(jì)量模型,對(duì)不同區(qū)域居民水產(chǎn)品消費(fèi)水平和消費(fèi)特征進(jìn)行了研究,本文分為4個(gè)部分六章進(jìn)行了分析:第一部分是基礎(chǔ)部分,包括第一章和第二章,介紹了研究目的與研究意義、國(guó)內(nèi)外研究現(xiàn)狀、研究?jī)?nèi)容、方法以及數(shù)據(jù)來源按,最后指出本研究的創(chuàng)新之處以及不足的地方,通過不同區(qū)域間水產(chǎn)品消費(fèi)進(jìn)行對(duì)比分析,總結(jié)不同區(qū)域消費(fèi)水平的差異以及影響因素。與此同時(shí),概述了水產(chǎn)品消費(fèi)的相關(guān)理論以及影響消費(fèi)水平和消費(fèi)行為的因素,最后界定了研究區(qū)域,以及在本文的研究中為什么把東部城市劃分在中部地區(qū)研究。第二部分包括文章的第三章、第四章,描述了全國(guó)、東部地區(qū)、中部地區(qū)、西部地區(qū)水產(chǎn)品生產(chǎn)、消費(fèi)概況,為下文提供背景分析,發(fā)現(xiàn)雖然全國(guó)水產(chǎn)品在近十年的產(chǎn)量都在遞增,但不同區(qū)域水產(chǎn)品產(chǎn)量差異非常明顯,隨后基于消費(fèi)經(jīng)濟(jì)學(xué)理論,結(jié)合調(diào)研數(shù)據(jù)著重比較分析了不同區(qū)域水產(chǎn)品消費(fèi)形式、消費(fèi)量、消費(fèi)變動(dòng),通過灰色預(yù)測(cè)模型對(duì)三地區(qū)未來水產(chǎn)品消費(fèi)進(jìn)行了預(yù)測(cè),通過對(duì)比分析發(fā)現(xiàn)東部、中部、西部居民人均水產(chǎn)品消費(fèi)性支出在今后的幾年時(shí)間里將保持穩(wěn)定增長(zhǎng),不同地區(qū)雖然消費(fèi)水平不同,但隨著居民收入水平的不斷提高,水產(chǎn)品占居民消費(fèi)性支持的比例不斷提升,居民飲水結(jié)構(gòu)不斷優(yōu)化,在六七年以后,西部地區(qū)居民人均水產(chǎn)品消費(fèi)性支出將首次超過中部地區(qū)。第三部分是第五章,運(yùn)用數(shù)理統(tǒng)計(jì)方法,結(jié)合調(diào)研數(shù)據(jù)分析東部(上海)地區(qū)、中部(北京)地區(qū)、西部(西安)地區(qū)水產(chǎn)品消費(fèi)特征,發(fā)現(xiàn)在消費(fèi)的主要種類上,三地區(qū)的都是以以魚類和蝦蟹為主,而東部地區(qū)對(duì)蝦的消費(fèi)最多,藻類的消費(fèi)地域差異也較為明顯,中西部地區(qū)明顯高于東部地區(qū);在水產(chǎn)品形態(tài)上,三個(gè)地區(qū)居民水產(chǎn)品消費(fèi)的主要形態(tài)為冰凍或冰鮮的原條產(chǎn)品和“三去”的初級(jí)加工水產(chǎn)品,魚糜制品在中部和西部受到一些消費(fèi)者的喜愛;在消費(fèi)場(chǎng)所上,居家消費(fèi)水產(chǎn)品是三地區(qū)居民的主要消費(fèi)場(chǎng)所,其次是酒店消費(fèi),但有少量居民在食堂消費(fèi)水產(chǎn)品;在東部地區(qū),居民對(duì)水產(chǎn)品的養(yǎng)殖環(huán)境有較高要求,喜歡吃海水養(yǎng)殖和捕撈的水產(chǎn)品,中西部地區(qū)則要求不明顯;在水產(chǎn)品購(gòu)買場(chǎng)所中,集貿(mào)市場(chǎng)是北三地區(qū)居民購(gòu)買水產(chǎn)品的主要場(chǎng)所,其次是水產(chǎn)品專賣店,也有部分居民選擇超市購(gòu)買,近年來少部分居民選擇網(wǎng)上訂購(gòu)。最后研究了不同區(qū)域居民收入水平、消費(fèi)習(xí)慣和偏好、替代副食品的價(jià)格水平和城鎮(zhèn)化水平對(duì)水產(chǎn)品消費(fèi)的影響。第四部分是第六章,針對(duì)以上各章的分析,提出在促進(jìn)中國(guó)城鎮(zhèn)居民水產(chǎn)品消費(fèi)方面應(yīng)因地制宜,不同地區(qū)采取不同措施,東部地區(qū)要東部地區(qū)建立健全水產(chǎn)品準(zhǔn)入制度,西部地區(qū)要提高居民收入水平和完善基礎(chǔ)設(shè)施并進(jìn),中部地區(qū)需應(yīng)加快城市化進(jìn)程的同時(shí)大力做好水產(chǎn)品宣傳工作。
[Abstract]:Aquatic products gradually by people deeply understanding because of its nutritional value, making the market and consumer groups gradually expand, demand is increasing year by year, the development of aquaculture related peoples diet and nutrition level, there are about 1 billion of the population are dependent on animal protein intake to aquatic products needed for life, in aquatic products China has accounted for about 11% of the family's diet structure, China's vast natural resources in different regions, there are obvious differences in the level of economic development and cultural practices, and thus lead to regional differences in aquatic products consumption level and consumption characteristics, from the regional perspective, in the eastern. In the central region, the production situation of aquatic products in the western region, based on comparative analysis of the consumption of aquatic products, the consumption level of different regional residents and including the purchase intention, The type of consumer, consumption patterns, consumer sites, different places to buy consumer characteristics are analyzed, and based on this, puts forward the countermeasures to improve the aquatic products consumption level of residents of different regions. The eastern region (Shanghai), central (Beijing area), West (Xi'an) consumption area aquatic products as the research object, obtain first-hand data through field research, using statistical method, established the econometric model for different regional residents aquatic products consumption level and consumption characteristics were studied, analyzed in this paper is divided into 4 parts and six chapters: the first part is the basic part, including the first chapter and the second chapter. At the same time, an overview of relevant theories of the consumption of aquatic products as well as the influence of consumption level and consumption behavior, finally defines the study area, and in the study of this paper is to study what the eastern city division in the central region. The second part includes the article the third chapter, the fourth chapter describes the national, eastern region, central region, western region aquatic products production and consumption situation, provide the background for the following analysis, found that although the national aquatic products in nearly ten years of production are increasing, but the output of aquatic products in different regions are very obvious differences, then based on the theory of consumption economics changes combined with the research data mainly compares and analyses the different forms of consumption, regional water consumption, the consumption of products, through the grey forecasting model of the three areas of future consumption of aquatic products Were predicted by comparison of Eastern, central and Western spending per capita consumption of aquatic products of residents will maintain steady growth in the next few years, although the level of consumption in different regions is different, but with the increasing levels of income, the consumption of aquatic products accounted for the rising proportion of support, the residents of drinking water structure optimization, in six or seven years, spending per capita consumption of aquatic products of residents in the western region will be more than the central region for the first time.
