【摘要】:貴州茅臺(tái)酒是世界三大蒸餾名酒之一,作為中國(guó)的國(guó)酒、文化酒,品質(zhì)已被中外科學(xué)家和廣大消費(fèi)者認(rèn)同,現(xiàn)已譽(yù)滿全球。文化遺產(chǎn)儲(chǔ)存著大量信息,從中可以看到一個(gè)國(guó)家的文明歷史進(jìn)程。正確認(rèn)識(shí)茅臺(tái)酒的文化遺產(chǎn)價(jià)值是科學(xué)保護(hù)、合理利用和申請(qǐng)世界文化遺產(chǎn)的前提。運(yùn)用文獻(xiàn)資料分析,現(xiàn)場(chǎng)調(diào)研,室內(nèi)分析,地理比較法等綜合分析茅臺(tái)酒文化的獨(dú)特性,將茅臺(tái)酒文化遺產(chǎn)置于全球視角進(jìn)行對(duì)比研究,揭示其全球顯著價(jià)值。對(duì)比地選擇主要以酒文化列入名錄的世界文化遺產(chǎn)地,有酒文化特征的世界文化遺產(chǎn)預(yù)備清單。從茅臺(tái)酒文化地特征、全球?qū)Ρ、遺產(chǎn)價(jià)值和保護(hù)管理方面得出以下結(jié)論與討論:(1)離開(kāi)茅臺(tái)鎮(zhèn)生產(chǎn)不出同樣的茅臺(tái)酒,主要是其產(chǎn)地的自然地理環(huán)境有三大特性:一是茅臺(tái)鎮(zhèn)獨(dú)特的地質(zhì)結(jié)構(gòu);二是優(yōu)良的赤水河水質(zhì);三是冬暖夏熱,風(fēng)微雨少的獨(dú)特氣候特征適宜微生物繁殖。綜合的地理環(huán)境因子決定茅臺(tái)酒釀造環(huán)境是無(wú)法遷移和復(fù)制的。貴州茅臺(tái)酒文化遺產(chǎn)包含釀酒工業(yè)遺址群、鹽運(yùn)碼頭、獨(dú)特的釀酒工藝、紅色文化、獨(dú)一無(wú)二適宜釀酒的生產(chǎn)環(huán)境、國(guó)酒歷史文化博物館等,是傳統(tǒng)人民利用特殊的地理環(huán)境和土地釀造白酒的典型,可作為人類使用地的杰出范例以及悠久釀酒歷史的特殊見(jiàn)證。(2)在16處世界酒文化遺產(chǎn)地中和7處酒文化遺產(chǎn)提名地中,選取7處與茅臺(tái)酒文化遺產(chǎn)地進(jìn)行對(duì)比,通過(guò)對(duì)比,發(fā)現(xiàn)這些酒在文化遺產(chǎn)構(gòu)成要素、酒生產(chǎn)環(huán)境及文化內(nèi)涵上都有很大不同。在中國(guó)白酒行業(yè)之林中,只有茅臺(tái)酒是唯一集綠色食品、有機(jī)食品和原產(chǎn)地域保護(hù)于一體的珍品,具有豐富的文化價(jià)值。(3)茅臺(tái)酒是當(dāng)?shù)厝藗円劳卸臒?風(fēng)微雨少的氣候條件,以及地質(zhì)、地形、土壤、水文、生物等因子的綜合體造就而成,這個(gè)綜合體是無(wú)法遷移和復(fù)制的茅臺(tái)酒文化遺產(chǎn)地是人與自然融合的典型特征,可以按照文化景觀類進(jìn)行世界遺產(chǎn)申報(bào)。茅臺(tái)酒文化景觀所包含的多種關(guān)聯(lián)酒文化,使其無(wú)論在國(guó)內(nèi)還是國(guó)外都有突出的普遍價(jià)值和唯一性,可以世界遺產(chǎn)第iii、v條標(biāo)準(zhǔn)提名列入世界文化遺產(chǎn)。(4)特殊人文環(huán)境、不可復(fù)制的微生物系統(tǒng)、無(wú)法遷移的氣候環(huán)境、原產(chǎn)地保護(hù)、地理標(biāo)志等與茅臺(tái)酒有關(guān)的標(biāo)簽,多處已被列入國(guó)家重點(diǎn)文物保護(hù)區(qū),是構(gòu)成茅臺(tái)文化景觀遺產(chǎn)的重要特殊資源。然而在現(xiàn)代文明的侵蝕下,茅臺(tái)酒文化景觀遺址顯得是如此脆弱,很多問(wèn)題不僅僅需要當(dāng)?shù)卣呐?還需要增強(qiáng)國(guó)際話語(yǔ)體系,得到國(guó)內(nèi),國(guó)際專家和組織在技術(shù)上的援助。
[Abstract]:Moutai wine in Guizhou is one of the three famous distilled wines in the world. As the national wine and cultural wine in China, the quality has been recognized by Chinese and foreign scientists and consumers, and has become a worldwide reputation. A large amount of information is stored in the cultural heritage. It is the premise of scientific protection, rational utilization and application of the world cultural heritage that a correct understanding of the cultural heritage value of Maotai wine can be seen in the course of civilization history of a country. Indoor analysis, geographical comparison and other comprehensive analysis of the uniqueness of Maotai wine culture, the cultural heritage of Maotai wine in the global perspective for comparative study. Reveal its global significant value. Select the world cultural heritage sites mainly listed by wine culture, and prepare list of the world cultural heritage with wine culture characteristics. From the characteristics of Maotai wine culture, the global comparison. In terms of heritage value and conservation management, the following conclusion and discussion: 1) you can't produce the same Moutai wine without Maotai. The natural geographical environment of its origin has three main characteristics: one is the unique geological structure of Maotai town; Second, excellent water quality of Chishui River; Third, warm winter and hot summer. The unique climatic characteristics of less wind and rain are suitable for microbial reproduction. The comprehensive geographical environmental factors determine that the brewing environment of Maotai wine can not be migrated and copied. The cultural heritage of Moutai wine in Guizhou includes wine-making industry sites. Salt transport wharf, unique wine making technology, red culture, unique production environment suitable for wine making, National Wine History and Culture Museum, etc., are typical of traditional people who use special geographical environment and land to brew liquor. As an outstanding example of human use and a special witness to the long history of wine making, there are 16 world wine cultural heritage sites and 7 wine cultural heritage nominees. Through the comparison of 7 places and Maotai wine cultural heritage sites, it is found that these wines are very different in the elements of cultural heritage, liquor production environment and cultural connotation, in the forest of Chinese liquor industry. Only Maotai wine is the only collection of green food organic food and native region protection in one with rich cultural value. Moutai wine is the local people rely on the warm summer wind and rain less climate conditions. And geological, topographic, soil, hydrological, biological and other factors brought up by the complex, this complex is unable to migrate and replicate the cultural heritage of Maotai is the typical characteristics of the integration of man and nature. Maotai wine cultural landscape contains a variety of related wine culture, so that it has outstanding universal value and uniqueness both at home and abroad. The World Heritage Article iiiv standard can be nominated for inclusion in the World Cultural Heritage. 4) Special human environment, non-replicable microbial system, untransferable climatic environment, and protection of origin. Geographical indications and other labels related to Maotai wine, many of which have been listed in the national key cultural heritage reserve, is an important special resource that constitutes the cultural landscape heritage of Maotai. However, under the erosion of modern civilization. The cultural landscape site of Maotai wine is so fragile that many problems need not only the efforts of the local government but also the strengthening of the international discourse system with the technical assistance of domestic and international experts and organizations.
