【摘要】:以大葉麻竹筍為原料,單因素試驗的基礎上,通過響應面法對高壓均質技術制備納米竹筍膳食纖維的工藝條件進行優(yōu)化。結果表明:高壓均質法制備納米竹筍膳食纖維的最佳工藝條件為物料濃度2.1%、物料溫度31℃、均質壓力33 MPa。在此條件下,納米竹筍膳食纖維得率為83.34%。
