基于“帕戈郎”清真雞肉的烏魯木齊市肉類流通追溯系統(tǒng)應(yīng)用研究

【摘要】:近年來,瘋牛病、禽流感和口蹄疫等家禽家畜類疫病爆發(fā)頻繁,肉類食品質(zhì)量安全堪憂,已嚴(yán)重影響消費(fèi)者的身體健康。目前,發(fā)達(dá)國(guó)家已出臺(tái)了相關(guān)法律法規(guī),針對(duì)肉類產(chǎn)品質(zhì)量安全可追溯性提出強(qiáng)制性要求。家畜產(chǎn)品的可追溯性可能會(huì)成為新的貿(mào)易壁壘,影響我國(guó)畜產(chǎn)品的國(guó)際市場(chǎng)競(jìng)爭(zhēng)力。因此構(gòu)建一個(gè)囊括生產(chǎn)加工、運(yùn)輸、銷售所有環(huán)節(jié)的肉制品溯源系統(tǒng),實(shí)現(xiàn)肉品全程溯源,對(duì)確保我國(guó)肉品的優(yōu)質(zhì)和安全,提高肉品產(chǎn)量和行業(yè)競(jìng)爭(zhēng)力,特別是打破肉制品的國(guó)際技術(shù)壁壘均具有深遠(yuǎn)的社會(huì)和經(jīng)濟(jì)意義。新疆“帕戈郎”清真食品公司主要從事禽類現(xiàn)代化屠宰加工、冷鏈屠宰加工、冷鏈物流配送、品牌連鎖銷售一體化經(jīng)營(yíng)業(yè)務(wù)。通過對(duì)家禽Itasystem標(biāo)簽化管理,標(biāo)記企業(yè)品牌和條碼,形成有效的追溯,保護(hù)生產(chǎn)者和消費(fèi)者的合法權(quán)益。本文以“帕戈郎”清真食品公司為例,對(duì)清真雞肉產(chǎn)品追溯系統(tǒng)的設(shè)計(jì)思想、溯源流程、溯源方案的實(shí)施等進(jìn)行了研究。研究?jī)?nèi)容主要包括以下幾個(gè)方面:第一,對(duì)系統(tǒng)開發(fā)過程中質(zhì)量溯源系統(tǒng)與物聯(lián)網(wǎng)的基礎(chǔ)理論、物聯(lián)網(wǎng)和二維碼技術(shù)、WebGIS技術(shù)等在溯源系統(tǒng)中的應(yīng)用進(jìn)行了分析。第二,比較分析了國(guó)內(nèi)外食品質(zhì)量溯源系統(tǒng)的應(yīng)用現(xiàn)狀,對(duì)新疆雞肉養(yǎng)殖場(chǎng)、生產(chǎn)廠家、相關(guān)食品安全監(jiān)管單位及對(duì)烏魯木齊市消費(fèi)者購(gòu)買可追溯農(nóng)產(chǎn)品的意愿進(jìn)行了相關(guān)調(diào)查,掌握了消費(fèi)者及市場(chǎng)運(yùn)營(yíng)機(jī)制對(duì)雞肉制品溯源系統(tǒng)的需求程度,初步確定雞肉產(chǎn)品溯源系統(tǒng)的研究?jī)?nèi)容,并提出切實(shí)可行的解決方案。第三,在上述研究的基礎(chǔ)上,設(shè)計(jì)“帕戈郎”清真雞肉溯源系統(tǒng)的總體方案,確定了產(chǎn)品追溯的5個(gè)關(guān)鍵點(diǎn),即養(yǎng)殖、屠宰、加工、冷藏、檢測(cè)等。第四,開發(fā)實(shí)現(xiàn)了“帕戈郎”清真雞肉產(chǎn)品的溯源流程。以“帕戈郎”清真雞肉產(chǎn)品為例,將具體的開發(fā)設(shè)計(jì)的溯源系統(tǒng)在該產(chǎn)品中予以實(shí)施,重點(diǎn)闡述在“帕戈郎”清真雞在孵化、養(yǎng)殖、活雞收購(gòu)、宰前檢疫、產(chǎn)品冷藏、出廠檢疫、產(chǎn)品銷售等環(huán)節(jié)溯源流程的設(shè)計(jì)和系統(tǒng)功能實(shí)現(xiàn)。
[Abstract]:In recent years, mad cow disease, bird flu and foot-and-mouth disease and other poultry and livestock diseases have frequently broken out, and the quality and safety of meat products have become a serious concern, which has seriously affected the health of consumers. At present, the developed countries have issued relevant laws and regulations. The traceability of livestock products may become a new trade barrier and affect the competitiveness of our country's livestock products in the international market. The traceability system of meat products in all parts of the market can ensure the quality and safety of meat products in our country, improve the output of meat products and enhance the competitiveness of the industry, so that the whole course of meat products can be traced back to the source. In particular, breaking down the international technical barriers to meat products has far-reaching social and economic significance. Xinjiang "Pagorang" halal food company is mainly engaged in modern poultry slaughtering processing, cold chain slaughtering processing, cold chain logistics distribution, Brand chain sales integrated business. Through the poultry Itasystem label management, label enterprise brand and bar code, form an effective traceability, protect the legitimate rights and interests of producers and consumers. This article takes "Pagorang" halal food company as an example, The design idea, traceability flow and the implementation of traceability scheme of halal chicken product traceability system are studied. The research contents mainly include the following aspects: first, The basic theory of quality traceability system and Internet of things, the application of Internet of things and WebGIS technology in traceability system are analyzed. Secondly, the application status of food quality traceability system at home and abroad is compared and analyzed. A related investigation was conducted on chicken farms, manufacturers, relevant food safety regulatory units and consumers' willingness to buy traceable agricultural products in Urumqi. Grasps the consumer and the market operation mechanism to the chicken product traceability system demand degree, preliminarily determines the chicken product traceability system research content, and proposes the feasible solution. Third, in the above research foundation, The overall scheme of "Pagorang" halal chicken traceability system was designed, and five key points of product traceability were determined, that is, breeding, slaughtering, processing, refrigeration, detection, etc. 4th, The traceability process of "Pagorang" halal chicken product is developed and realized. Taking "Pagorang" halal chicken product as an example, the specific traceability system of development and design is implemented in this product, and the emphasis is laid on the hatching of "Pagorang" halal chicken. Design and system function realization of traceability flow of breeding, live chicken purchase, premortem quarantine, product refrigeration, factory quarantine and product sales.
