吉林省棚膜蔬菜質(zhì)量安全可追溯體系研究

【摘要】:蔬菜是日常生活中最常見的食品之一,保證蔬菜質(zhì)量安全是農(nóng)產(chǎn)品供應(yīng)中必須面對的問題。在蔬菜的生產(chǎn)及供應(yīng)過程中,記錄蔬菜供應(yīng)鏈各個環(huán)節(jié)的關(guān)鍵信息,建立蔬菜質(zhì)量安全可追溯體系,是保證蔬菜質(zhì)量安全的有效方式。 作為中國東北的一個農(nóng)業(yè)大省,吉林省受氣候和地理位置的影響,冬天蔬菜的供應(yīng)一直依靠外來輸入為主,要改變這一狀況,就必須加快推進(jìn)棚膜蔬菜產(chǎn)業(yè)的發(fā)展。棚膜蔬菜的生產(chǎn)可以克服氣候的不利影響,就近的為消費(fèi)者提供新鮮的蔬菜。對于蔬菜供應(yīng)來說,僅保證蔬菜充足和新鮮的供應(yīng)是不夠的,還必須保證蔬菜質(zhì)量的安全。蔬菜質(zhì)量安全追溯系統(tǒng)可以記錄蔬菜生產(chǎn)、加工、運(yùn)輸和銷售過程中的一些信息,消費(fèi)者和監(jiān)管部門可以方便的查詢各項(xiàng)信息,,可以使消費(fèi)者明明白白消費(fèi),也方便了監(jiān)管部門的管理。 建立吉林省蔬菜質(zhì)量安全追溯體系,首要的問題是明確需要記錄那些關(guān)鍵信息。根據(jù)與蔬菜供應(yīng)鏈相關(guān)的法律法規(guī)和國家標(biāo)準(zhǔn),對蔬菜供應(yīng)鏈中可能需要記錄的指標(biāo)進(jìn)行了提取,而這些指標(biāo)有些對追溯系統(tǒng)來說作用是不大的,所以使用層次分析法對各項(xiàng)指標(biāo)進(jìn)行了篩選,確定了吉林省蔬菜質(zhì)量安全追溯體系最后需要記錄的關(guān)鍵指標(biāo)。吉林省蔬菜質(zhì)量安全追溯體系的關(guān)鍵指標(biāo)與蔬菜生產(chǎn)和流通的各個環(huán)節(jié)相對應(yīng),其中一級關(guān)鍵指標(biāo)為:產(chǎn)地環(huán)境、生產(chǎn)農(nóng)資、生產(chǎn)過程、加工過程、運(yùn)輸過程、貯藏過程和銷售過程,每個一級指標(biāo)之下又包含若干二級關(guān)鍵指標(biāo)。 根據(jù)信息記錄關(guān)鍵指標(biāo)的篩選結(jié)果,對吉林省棚膜蔬菜質(zhì)量安全追溯系統(tǒng)進(jìn)行了整體的設(shè)計。首先對追溯系統(tǒng)所使用的追溯標(biāo)簽和追溯碼進(jìn)行了設(shè)計,追溯標(biāo)簽的設(shè)計的目標(biāo)是信息簡單、明確的展現(xiàn)給消費(fèi)者,為此在設(shè)計中使用了二維碼技術(shù),消費(fèi)者使用移動設(shè)備可以方便的獲取信息。為了保證追溯碼的安全,使其在使用過程中不被盜用,設(shè)計了內(nèi)部追溯碼和外部追溯碼結(jié)合的方式,其中內(nèi)部追溯碼只供系統(tǒng)內(nèi)部使用,外部追溯碼是消費(fèi)者查詢所使用的編碼,是使用加密的方法生成的,可以保證包裝上的編碼不被窮舉盜用。結(jié)合調(diào)研和研究情況,對吉林省棚膜蔬菜質(zhì)量安全追溯系統(tǒng)的功能進(jìn)行了設(shè)計,將整個系統(tǒng)分為信息采集模塊、信息處理模塊、信息查詢模塊和管理模塊,對上述模塊需要實(shí)現(xiàn)的功能進(jìn)行了描述。 為了保證吉林省棚膜蔬菜質(zhì)量安全追溯系統(tǒng)的實(shí)施,對與蔬菜質(zhì)量安全追溯的制度建設(shè)進(jìn)行了研究,分析了制度建設(shè)的必要性,重點(diǎn)對蔬菜生產(chǎn)加工企業(yè)的制度建設(shè)進(jìn)行了研究,分析了一些蔬菜生產(chǎn)加工企業(yè)為融入吉林省棚膜蔬菜質(zhì)量安全追溯系統(tǒng)進(jìn)行制度建設(shè)的要點(diǎn)。本文對吉林省棚膜蔬菜質(zhì)量安全追溯系統(tǒng)的設(shè)計具有較強(qiáng)的現(xiàn)實(shí)意義。
[Abstract]:Vegetable is one of the most common food in daily life. To ensure the quality and safety of vegetable is a problem that must be faced in the supply of agricultural products. In the process of vegetable production and supply, the key information of every link of vegetable supply chain is recorded. Establishing traceability system of vegetable quality and safety is an effective way to ensure vegetable quality and safety. As a large agricultural province in northeast China, Jilin Province is affected by climate and geographical location. In winter, the supply of vegetables has been mainly dependent on foreign inputs. We must change this situation. It is necessary to speed up the development of the greenhouse vegetable industry. The production of greenhouse vegetables can overcome the adverse effects of the climate and provide fresh vegetables to consumers nearby. For vegetable supply, It is not enough to ensure an adequate and fresh supply of vegetables. It is also necessary to ensure the safety of vegetable quality. The vegetable quality safety traceability system can record some information during the production, processing, transportation and sale of vegetables. Consumers and regulators can easily query all kinds of information, can make consumers clear consumption, but also convenient regulatory management. The most important thing in establishing the vegetable quality and safety traceability system in Jilin Province is to clearly record the key information. According to the laws, regulations and national standards related to the vegetable supply chain, The indicators that may need to be recorded in the vegetable supply chain are extracted, and some of these indicators are of little use to the traceability system, so AHP is used to screen the indicators. The key indexes of Jilin Province vegetable quality and safety traceability system are determined. The key indexes of Jilin Province vegetable quality and safety traceability system correspond to each link of vegetable production and circulation. The primary key indicators are: production environment, agricultural production, production process, processing process, transportation process, storage process and sales process. According to the screening results of key indexes of information recording, the quality and safety traceability system of greenhouse film vegetables in Jilin Province was designed. Firstly, the traceability labels and traceability codes used in the traceability system were designed. The goal of the traceback label design is to show the information to the consumer simply and clearly. For this reason, the two-dimension code technology is used in the design, and the consumer can easily obtain the information by using mobile device, in order to ensure the safety of the traceback code, So that it is not misused in the process of use, a combination of internal traceability code and external traceability code is designed, in which the internal traceback code is only used for internal use of the system, and the external traceback code is the code used by the consumer to query. It is generated by using the method of encryption, which can ensure that the code on the package will not be stolen. According to the investigation and research situation, the function of the plastic film vegetable quality and safety traceability system in Jilin Province has been designed. The whole system is divided into information collection module, information processing module, information query module and management module. In order to ensure the implementation of greenhouse film vegetable quality and safety traceability system in Jilin Province, the system construction of vegetable quality and safety traceability was studied, and the necessity of system construction was analyzed. The emphasis is on the system construction of vegetable production and processing enterprises. This paper analyzes the key points of some vegetable production and processing enterprises in order to integrate the greenhouse film vegetable quality and safety traceability system into Jilin Province. This paper has a strong practical significance for the design of the greenhouse film vegetable quality and safety traceability system in Jilin Province.
