【摘要】：水果在采收、運輸和貯藏過程中易受到病原微生物污染,產(chǎn)生并積累各種真菌毒素。由于不適宜的加工工藝,這些真菌毒素會遷移至水果加工制品中,進而引起潛在風(fēng)險。鑒于此,世界各國都積極制定各種標(biāo)準、法規(guī)來控制真菌毒素在水果及其制品中的污染水平。本文綜述了近年來我國水果中真菌毒素的現(xiàn)行限量標(biāo)準及檢測方法標(biāo)準的制修訂狀況,并與國外相應(yīng)的標(biāo)準進行了對比和探討,分析了在我國建立水果中真菌毒素限量及檢測方法標(biāo)準的緊迫性和重要性,以期為相關(guān)檢測人員進行水果中真菌毒素檢測時選擇方法提供依據(jù),同時也為政府部門制定國家標(biāo)準提供參考。
[Abstract]:Fruit is liable to be contaminated by pathogenic microorganisms during harvest, transportation and storage, producing and accumulating various mycotoxins. Due to improper processing, these mycotoxins migrate to fruit products, causing potential risks. In view of this, countries all over the world actively set up various standards and regulations to control the contamination level of mycotoxins in fruits and their products. In this paper, the current limit standard of mycotoxin and the standard of detection method in fruit in our country are reviewed and compared with those in other countries. This paper analyses the urgency and importance of establishing the limit of mycotoxins in fruits and the standard of detection methods in our country, in order to provide the basis for the selection of methods for the detection of mycotoxins in fruits by relevant examiners. At the same time, it also provides reference for government departments to establish national standards.
