基于不同養(yǎng)老模式的長(zhǎng)沙市老年人膳食結(jié)構(gòu)比較

【摘要】:目的對(duì)不同養(yǎng)老模式下長(zhǎng)沙市老年人膳食結(jié)構(gòu)進(jìn)行調(diào)查,為改善老年人生活質(zhì)量以及制定相應(yīng)的營(yíng)養(yǎng)干預(yù)措施提供科學(xué)依據(jù)。方法采用隨機(jī)抽樣方法,在長(zhǎng)沙市隨機(jī)抽取3所公辦福利院、3所民辦養(yǎng)老院和3個(gè)社區(qū),共計(jì)443名60歲以上老年人參與問(wèn)卷調(diào)查。采用食物頻率法(FFQ)以及3 d 24 h膳食回顧法調(diào)查老年人飲食消費(fèi)模式、飲食習(xí)慣等。結(jié)果在老年人的膳食結(jié)構(gòu)中,社區(qū)老年人的油脂和食鹽的實(shí)際攝入量明顯高于《中國(guó)居民膳食指南》中推薦攝入量,分別是其1.41倍、2.1倍;而公辦福利院以及民辦養(yǎng)老院老年人每日攝入油脂、食鹽的量符合《指南》中推薦油脂≤25 g、食鹽≤6 g的標(biāo)準(zhǔn)。相比老年人能量攝入標(biāo)準(zhǔn)而言,社區(qū)老人平均攝入的能量相對(duì)較高;從攝入食物構(gòu)成中得出,男性攝入動(dòng)物性食品比例比女性高(P0.05),而女性攝入植物性食品比例比男性高(P0.05)。結(jié)論老年人魚蝦類、奶制品類、豆制品類等食物每日攝入量普遍偏低,存在膳食結(jié)構(gòu)不合理情況。需加強(qiáng)對(duì)老年人的營(yíng)養(yǎng)教育,促進(jìn)老人平衡膳食,預(yù)防慢性疾病的發(fā)生,改善老年人營(yíng)養(yǎng)狀況。

Methods A total of 443 elderly people over 60 years old were selected from 3 private nursing homes and 3 communities in Changsha City by random sampling. The dietary consumption patterns and dietary habits of the elderly were investigated by food frequency method (FFQ) and 3 days and 24 h dietary review.
