【摘要】：通過(guò)走訪深圳主要農(nóng)貿(mào)市場(chǎng)和各大超市,共采集常見(jiàn)食物(如谷類(lèi)及谷類(lèi)產(chǎn)品、蔬菜、豆制品和肉類(lèi)等)共340批次,按照GB/T 5009.6—2003"食品中脂肪的測(cè)定"第一法和微波消解-電感耦合等離子體發(fā)射光譜法,對(duì)樣品中的脂肪、鈉進(jìn)行測(cè)定,并結(jié)合深圳居民每日膳食攝入量,對(duì)深圳居民膳食中脂肪、鈉的日均攝入量進(jìn)行估算。結(jié)果顯示,深圳市居民脂肪攝入的主要來(lái)源為植物油和豬肉,脂肪日均攝入量為102 g,鈉攝入的主要來(lái)源為食鹽、醬及醬油,日均鈉的攝入量為4 737 mg,均高于《中國(guó)居民膳食營(yíng)養(yǎng)素參考攝入量》(2013版)中建議的RNI/AI值。建議深圳居民適當(dāng)減少高脂肪、高鈉食物的攝入,優(yōu)化膳食結(jié)構(gòu),預(yù)防和控制營(yíng)養(yǎng)相關(guān)的慢性病。
[Abstract]:By visiting major farmers' markets and supermarkets in Shenzhen, 340 batches of common foods (such as cereals and cereals, vegetables, beans and meat) were collected. According to the first method of GB / T 5009.6-2003 "determination of Fat in Food" and the microwave digestion-inductively coupled plasma emission spectrometry (ICP-AES), the fat and sodium in the sample were determined, combined with the daily dietary intake of Shenzhen residents. The daily intake of fat and sodium in the diet of Shenzhen residents was estimated. The results showed that the main sources of fat intake in Shenzhen residents were vegetable oil and pork, and the average daily fat intake was 102 g. The main sources of sodium intake were salt, sauce and soy sauce. The daily average sodium intake was 4 737 mg, which was higher than the RNI / AI value suggested in the reference intake of Dietary Nutrition for Chinese residents (2013). It is suggested that Shenzhen residents should reduce the intake of high fat and sodium foods, optimize their dietary structure, and prevent and control nutrition-related chronic diseases.
