【摘要】：為探究茶多酚消毒時(shí)的色度問(wèn)題,采用茶多酚中具有抑菌作用的主要成分表沒(méi)食子兒茶素沒(méi)食子酸脂(Epicatechin gallate,EGCG)為消毒劑,在不同條件下(消毒劑投加量、接觸時(shí)間、水樣p H、光照條件),測(cè)試EGCG氧化聚合反應(yīng)對(duì)水樣色度變化的影響。研究表明,非酶促氧化聚合反應(yīng)主要受EGCG的投加量、水樣p H的影響,其影響色度的方式是通過(guò)影響反應(yīng)平衡進(jìn)而控制聚合物的生成量;酶促氧化聚合反應(yīng)的條件是存在多酚氧化酶(PPO),水中細(xì)菌可提供PPO,而光照條件是影響PPO活性的主要因素,水樣p H的變化對(duì)于二聚醌(dimer quinone)進(jìn)一步發(fā)生親核加成反應(yīng)起著關(guān)鍵作用。
[Abstract]:In order to investigate the chromaticity of tea polyphenols in disinfection, the main composition of tea polyphenols, Epicatechin gallate EGCGG, was used as disinfectant under different conditions (dosage of disinfectant, contact time). The effect of EGCG oxidation polymerization on the chroma of water sample was tested. The results showed that the non-enzymatic oxidative polymerization was mainly affected by the dosage of EGCG and the pH of water sample. The way to influence the chroma was to control the amount of polymer by influencing the reaction equilibrium. The condition of enzymatic oxidative polymerization is the existence of polyphenol oxidase (PPO), the PPO can be provided by bacteria in water, and the light condition is the main factor affecting the activity of PPO. The change of pH in water sample plays a key role in the further nucleophilic addition reaction of dimer quinone.
