【摘要】：隨著汞的廣泛使用,其對(duì)環(huán)境的污染越來越嚴(yán)重,通過食物鏈進(jìn)行循環(huán)富集作用,對(duì)人類健康構(gòu)成威脅。文章簡述汞在不同形態(tài)下對(duì)動(dòng)物和人的危害機(jī)理,分析重金屬汞的污染來源和殘留情況,分析目前國內(nèi)外對(duì)動(dòng)物性食品的重金屬汞限量標(biāo)準(zhǔn),并對(duì)汞的檢測(cè)現(xiàn)狀和發(fā)展趨勢(shì)進(jìn)行展望分析。
[Abstract]:With the widespread use of mercury, its pollution to the environment is becoming more and more serious. In this paper, the harm mechanism of mercury to animals and people in different forms is briefly described, the pollution sources and residues of heavy metal mercury are analyzed, and the limit standards of heavy metal mercury for animal foods at home and abroad are analyzed. The present situation and development trend of mercury detection were analyzed.
