海藻糖對(duì)乳酸桿菌耐熱和室溫貯存保護(hù)作用的研究

【摘要】:乳酸桿菌不耐高溫和室溫貯存是其應(yīng)用于飼料添加劑的一大限制因素,本試驗(yàn)旨在研究5%(W/V)的海藻糖對(duì)三株乳酸桿菌在高溫處理和室溫貯存條件下的保護(hù)作用。結(jié)果表明:海藻糖能顯著提高乳酸桿菌耐熱性和室溫貯存的存活率,且不同菌株抗逆性能不同,其中F22菌株表現(xiàn)出較G31和H51兩株菌更好的耐熱性和耐貯性。添加海藻糖保護(hù)的F22菌株70℃處理5 min,活菌數(shù)為(6.0±0.1)×10~5cfu/m L,對(duì)照組為(1.2±0.1)×10~2 cfu/m L;室溫貯存15 d,添加海藻糖的試驗(yàn)組存活率為(127.94±0.23)%,對(duì)照組為(89.45±0.78)%。由此可見(jiàn),海藻糖可作為微生態(tài)制劑高溫加工和室溫貯存的保護(hù)劑,提高乳酸桿菌的耐熱性和延長(zhǎng)保質(zhì)期。

The purpose of this study was to study the protective effect of 5% trehalose on three Lactobacillus strains under high temperature treatment and room temperature storage.
