不同添加量的甘草飼喂對(duì)多浪羊肉特征風(fēng)味物質(zhì)的影響

【摘要】:本研究以新疆特殊堿性環(huán)境下養(yǎng)殖的特色肉羊品種多浪羊?yàn)檠芯繉?duì)象,探究日糧中添加不同比例的甘草對(duì)多浪羊皮下脂肪組織中揮發(fā)性物質(zhì)的影響。采用頂空固相微萃取和同時(shí)蒸餾萃取兩種前處理方式,利用氣相質(zhì)譜聯(lián)用儀器為分析手段對(duì)多浪羊皮下脂肪組織中的揮發(fā)性成分進(jìn)行檢測(cè)分析。建立了多浪羊皮下脂肪組織中的揮發(fā)性成分萃取和檢測(cè)條件,研究日糧中不同甘草添加量對(duì)揮發(fā)性成分的影響。主要研究結(jié)果如下:1采用同時(shí)蒸餾萃取為前處理方法,探究了該方法對(duì)多浪羊皮下脂肪組織中的揮發(fā)性化合物萃取條件。結(jié)果表明,萃取時(shí)間為80 min、樣品用量為100 g、萃取溶劑為乙醚、色譜柱為DB-FFAP、程序升溫:柱初溫40℃,保持2 min,以6℃/min上升到120℃,保持1 min,接著以4℃/min上升到160℃,保持1 min,最后以2℃/min上升到210℃,保持5 min;緷M足了對(duì)脂肪組織中揮發(fā)性物質(zhì)的研究要求。2采用頂空固相微萃取為前處理方法,探究了該方法對(duì)多浪羊皮下脂肪組織中的揮發(fā)性化合物萃取條件。結(jié)果表明,萃取時(shí)間為60 min、萃取溫度為100℃、樣品用量為10 g;緷M足了實(shí)驗(yàn)的要求。3采用同時(shí)蒸餾萃取為前處理方法,對(duì)不同甘草添加量喂養(yǎng)的多浪羊皮下脂肪組織進(jìn)行了分析。結(jié)果表明,當(dāng)甘草添加量為40%時(shí)對(duì)揮發(fā)性物質(zhì)的影響較大,部分揮發(fā)性脂肪酸的減少量為:己酸31.75%,辛酸19.51%,癸酸12.43%,4-甲基辛酸34.47%,4-甲基壬酸41.64%。4采用頂空固相微萃取為前處理方法,對(duì)不同甘草添加量喂養(yǎng)的多浪羊皮下脂肪組織進(jìn)行了分析。結(jié)果表明,共檢測(cè)出了32種化合物,酸類、酯類、醛類、酮類等,其中酸類化合物的含量減少了5%,醛類減少了3%。5兩種前處理方法在多浪羊皮下脂肪組織中共檢測(cè)出了83種化合物,其中主要的三大類化合物為:酸類化合物占40.96%,酯類化合物占19.28%,醛類化合物占12.05%。
[Abstract]:In this study, we studied the effects of different proportion of liquorice on volatile substances in subcutaneous adipose tissue of Doulang sheep, a special breed of mutton sheep bred under special alkaline environment in Xinjiang, in order to investigate the effect of different proportion of liquorice on the volatile substances in subcutaneous adipose tissue of Doulang sheep. Headspace solid-phase microextraction (SPME) and simultaneous distillation extraction (SPME) were used to detect and analyze the volatile components in the subcutaneous adipose tissue of Duolang sheep by gas phase mass spectrometry (GC-MS). The extraction and detection conditions of volatile components in subcutaneous adipose tissue of Doulang sheep were established to study the effect of different dosage of Glycyrrhiza uralensis on volatile components in diet. The main results are as follows: 1. The extraction conditions of volatile compounds in the subcutaneous adipose tissue of Doulang sheep were studied by using simultaneous distillation and extraction as the pretreatment method. The results showed that the extraction time was 80 min, the sample dosage was 100 g, the solvent was ether, the chromatographic column was DB-FFAP.The programmed temperature was: the initial temperature of the column was 40 鈩,
