大豆素對(duì)湘中黑牛育肥牛胴體性能和肉品質(zhì)的影響

【摘要】:本試驗(yàn)旨在研究飼糧添加大豆素對(duì)湘中黑牛育肥牛胴體性能和肉品質(zhì)的影響。選擇14頭健康、體重[(450±20)kg]相近、2歲左右閹割湘中黑牛,隨機(jī)分成2組,每組7頭,對(duì)照組飼喂基礎(chǔ)飼糧,試驗(yàn)組飼喂基礎(chǔ)飼糧+500 mg/kg大豆素。試驗(yàn)期為120 d。結(jié)果表明:與對(duì)照組相比,1)添加大豆素對(duì)宰前活重、熱胴體重、屠宰率無(wú)顯著影響(P0.05),胴體的脂肪含量、背膘厚有降低趨勢(shì),但差異不顯著(P0.05);2)添加大豆素顯著提高了背最長(zhǎng)肌的粗脂肪含量及大理石花紋評(píng)分(P0.05),分別提高了8.34%、1.93分,并顯著降低了排酸24 h肌肉的p H和水分含量(P0.05),顯著增加了肌肉的紅度值(P0.05);3)添加大豆素顯著降低了血清中葡萄糖、尿素氮、甘油三酯、總膽固醇、非酯化脂肪酸、高密度脂蛋白膽固醇、低密度脂蛋白膽固醇的濃度(P0.05);4)添加大豆素分別顯著提高和降低了背最長(zhǎng)肌的異檸檬酸脫氫酶活性和葡萄糖-6-磷酸脫氫酶活性(P0.05)。結(jié)果提示,飼糧添加大豆素能夠影響育肥牛的脂類(lèi)代謝,促進(jìn)肌肉脂肪沉積,改善牛肉的大理石花紋和品質(zhì)。
[Abstract]:The purpose of this study was to study the effects of dietary daidzein supplementation on carcass performance and meat quality of black fattening cattle in central Hunan Province. Fourteen healthy cattle with a body weight of about 2 years old or so were selected and randomly divided into 2 groups, 7 in each group. The control group was fed with basic diet and the experimental group was fed with 500 mg/kg daidzein. The results showed that: compared with the control group, the addition of daidzein had no significant effect on premortem weight, hot carcass weight, slaughter rate, and fat content of carcass. The thickness of backfat decreased, but the difference was not significant (P0.05 ~ (2)) addition of daidzein significantly increased the content of crude fat of the longissimus dorsi muscle and the marbling score (P0.05), and increased 8.34 and 1.93 points, respectively. The pH and water content of muscle after 24 h acid excretion were significantly decreased, and the red value of muscle was increased significantly (P 0.05 ~ (3)) addition of daidzein significantly decreased serum glucose, urea nitrogen, triglyceride, total cholesterol, and non-esterified fatty acid, and decreased serum glucose, urea nitrogen, triglyceride, total cholesterol and non-esterified fatty acid. High density lipoprotein cholesterol (HDL-C) and low density lipoprotein cholesterol (LDL-C) added with daidzein significantly increased and decreased isocitrate dehydrogenase activity and glucose-6-phosphate dehydrogenase activity in the longissimus dorsi muscle respectively. Diet supplemented with daidzein could affect fat metabolism of fattening cattle, promote muscle fat deposition, and improve marbling and quality of beef.
