明清時期徽州地區(qū)的茶葉傳說及其民俗

【摘要】:中國傳統(tǒng)文化博大精深,茶文化是其中十分重要的組成部分。如果說,文化差異性可以用“十里不同風(fēng),百里不同俗”來劃分,那么,世界上就沒有任何兩種文化是類似或相同的了。然而并非如此,世界上卻有如此一種文化,它足以拉近世界之間的距離,無疑,這種偉大的文化就是——茶文化。 眾所周知,茶葉有著幾千年的歷史,中國也是世界公認的茶葉的發(fā)源地和茶文化的發(fā)源地。茶葉有保健功能,也有陶冶情操的作用。自唐朝茶為國飲始,茶葉開始逐漸外銷出口,贏得了世界的好評。如今,世界各地到處都有中國茶的足跡,世界上無論何處,或飲茶、或種茶、或茶道都與中國有近似之處,表現(xiàn)最為明顯的當屬與中國一衣帶水的鄰國日本。盡管日本的茶道世界聞名,但無疑也是源于中國。明清時期中國茶葉發(fā)展十分迅速,對世界的茶葉市場有著巨大的影響,徽州地區(qū)也在明清時期創(chuàng)制和生產(chǎn)了歷史名茶,給當?shù)亟?jīng)濟的迅速發(fā)展和文化的頻繁交流帶來了十分積極的影響。 中國是文明古國,’禮儀之邦,重禮節(jié)。在中國,客來敬茶必不可少,茶葉已經(jīng)成為中國待客的一種高雅藝術(shù)和社交活動。在飲茶時也可適當佐以茶食、糖果、菜肴等,達到調(diào)節(jié)口味和點心之功效;罩莸貐^(qū)亦是如此。 本文在明清時期徽州地區(qū)茶葉迅速發(fā)展的時代背景下,對徽州地區(qū)茶葉的種植、生產(chǎn)、采摘、飲用等習(xí)俗進行初步調(diào)查研究;罩莸貐^(qū)產(chǎn)茶,人們的生產(chǎn)、生活都離不開茶,明朝時期便有“人固不可一日無茶之說”;罩萑藧鄄,也懂茶,在品飲過程中形成了較為固定的飲用習(xí)俗,也為后來出現(xiàn)的茶道、茶藝奠定了堅實的基礎(chǔ)。 本文首先對徽州名茶太平猴魁、黃山毛峰、松蘿茶、祁門紅茶等茶葉的歷史、傳說故事進行了搜集、整理,它們具有的傳奇性色彩充分展現(xiàn)了勞動人民對徽州名茶的重視程度可見一斑;其次對徽州地區(qū)相關(guān)茶俗進行了簡要的介紹,內(nèi)容包括茶諺、茶謠、采茶歌、采茶舞、敬茶及飲茶習(xí)俗、茶亭及茶聯(lián)等,從人們?nèi)粘I钪刑綄げ枞~的重要作用;再次,本文還針對徽州地區(qū)重要儀式及禮儀方面茶葉的使用進行了羅列和研究,比如說徽州地區(qū)重要的歲時節(jié)令、人生儀禮(誕生禮、婚喪嫁娶等)、祭祀等重要儀式中的茶,其中徽州地區(qū)記載最多的和記錄最詳細的則是婚禮中茶的出現(xiàn),如“三茶六禮”等,這充分說明了徽州人對茶葉“不可移植”的認識以及對忠貞不渝的美好愿望,也說明了茶葉是徽州人婚禮中充當了不可替代的物品;最后,本文對徽州地區(qū)名茶被評為國家級非物質(zhì)文化遺產(chǎn)項目名錄進行了簡單介紹,并闡釋了如何對徽州地區(qū)太平猴魁、祁門紅茶等茶葉非物質(zhì)文化遺產(chǎn)的傳承與保護,對如何保證徽州地區(qū)綠茶、紅茶制作工藝的延續(xù)提出了一點思考?傊,本文總體上對明清時期徽州地區(qū)的茶俗進行了簡單的闡述和研究。
[Abstract]:Chinese traditional culture is extensive and profound, tea culture is a very important part of it. If cultural differences can be divided by "ten li different wind, a hundred miles different customs", then no two cultures in the world are similar or identical. However, there is such a culture in the world, it is enough to draw the distance between the world, no doubt, this great culture is-tea culture. As we all know, tea has a history of thousands of years, and China is also recognized as the birthplace of tea and the birthplace of tea culture. Tea has the function of health care, also has the function of edifying sentiment. Since the Tang Dynasty tea for the country began, tea began to export gradually, won the praise of the world. Nowadays, there are footprints of Chinese tea everywhere in the world. Everywhere in the world, tea drinking, growing tea, or tea ceremony are similar to China, the most obvious of which is Japan, a neighboring country with a narrow strip of water. Although Japan's tea ceremony is famous all over the world, it is undoubtedly derived from China. During the Ming and Qing dynasties, Chinese tea developed very rapidly and had a great influence on the world tea market. Huizhou region also created and produced historic tea during the Ming and Qing dynasties. The rapid development of local economy and frequent cultural exchanges have brought a very positive impact. China is a country of ancient civilization and respect for etiquette. Tea has become an elegant art and social activity in China. Tea can also be supplemented with tea food, candy, dishes and so on, to regulate the taste and dim sum effect. The same is true of Huizhou. Under the background of the rapid development of tea in Huizhou during the Ming and Qing dynasties, this paper makes a preliminary investigation and study on the customs of tea planting, production, picking and drinking in Huizhou. Huizhou tea production, people's production, life can not be separated from tea, the Ming Dynasty, there was "people can not be a day without tea." Huizhou people love tea, also know tea, in the process of drinking formed a relatively fixed drinking custom, but also for the subsequent emergence of tea ceremony, tea has laid a solid foundation. In this paper, the history and legend of famous Huizhou tea, such as Taiping Houkui Tea, Huangshan Maofeng, pineapple tea, Keemun Black Tea and so on, are collected and sorted out. Their legendary color fully shows the degree of attention the working people attach to Huizhou famous tea. Secondly, they briefly introduce the relevant tea customs in Huizhou region, including tea proverbs, tea ballads, tea picking songs, tea dance, etc. The customs of respecting and drinking tea, tea kiosks and tea couplets explore the important role of tea from people's daily life. Thirdly, this paper also lists and studies the use of tea in Huizhou area in terms of important rituals and rituals. For example, tea in important rituals such as the festival at the age of Huizhou, the ritual of life (birth ceremony, marriage and funeral marriage, etc.), sacrifice, and other important rituals, among which the most recorded and detailed ones in Huizhou are the appearance of tea in the wedding. Such as "three tea and six rituals", this fully explains Huizhou people's understanding of tea "not transplantable" and their good desire for loyalty, and also shows that tea is an irreplaceable item in Huizhou people's wedding; finally, This paper briefly introduces the list of famous tea in Huizhou as a national intangible cultural heritage project, and explains how to inherit and protect the intangible cultural heritage of Huizhou tea, such as Taiping Houkui Tea, Keemun Black Tea, etc. How to ensure the continuation of Huizhou green tea, black tea production technology put forward some thoughts. In a word, this paper makes a brief exposition and research on the tea customs of Huizhou area in Ming and Qing dynasties.
