旅游飲食景觀評(píng)價(jià)的初步研究

【摘要】:景觀是一個(gè)地域綜合體,囊括了多種形式的組合,飲食與景觀具有天然的聯(lián)系,它根植于特定地域,彰顯著濃郁的地方特色,不僅滿足基本生存需求,更是源于生活的審美體驗(yàn)。飲食景觀(foodscape)是景觀研究的新領(lǐng)域,當(dāng)進(jìn)入旅游中,其功能發(fā)生轉(zhuǎn)變,作為旅游吸引物形成旅游飲食景觀,這為旅游景觀的理論研究和實(shí)際應(yīng)用開拓了新思路。如何認(rèn)識(shí)旅游飲食景觀?如何評(píng)價(jià)旅游飲食景觀?如何優(yōu)化旅游飲食景觀?是研究旅游飲食景觀有待于解決的問(wèn)題。 本文在總結(jié)飲食景觀相關(guān)研究?jī)?nèi)容的基礎(chǔ)上,形成對(duì)飲食景觀的初步認(rèn)識(shí),并經(jīng)過(guò)梳理景觀概念體系提出了旅游飲食景觀的基本概念。旅游景觀學(xué)、集體記憶論、傳播學(xué)、符號(hào)學(xué)等多學(xué)科理論的綜合運(yùn)用為探索旅游飲食景觀的形成過(guò)程提供了理論依據(jù),對(duì)飲食景觀研究?jī)?nèi)容的闡釋及質(zhì)性研究方法(實(shí)地觀察和訪談?wù){(diào)查)的運(yùn)用,則為剖析旅游飲食景觀結(jié)構(gòu)開啟了思路。通過(guò)問(wèn)卷調(diào)查獲取基礎(chǔ)數(shù)據(jù),注重將定性化研究(理論探索)與定量化研究(結(jié)構(gòu)方程模型、模糊綜合評(píng)判法)相結(jié)合,本文構(gòu)建了旅游飲食景觀的評(píng)價(jià)指標(biāo)體系及多層次模糊綜合評(píng)判模型。本文采取實(shí)證主義研究思路對(duì)盱眙龍蝦景觀和青島啤酒景觀進(jìn)行比較研究,最后,根據(jù)實(shí)證評(píng)價(jià)結(jié)果,基于旅游飲食景觀的評(píng)價(jià)指標(biāo)體系與權(quán)重進(jìn)一步探索其設(shè)計(jì)與優(yōu)化之路。 本文的主要研究結(jié)論如下: (1)基于相關(guān)理論,本文界定了旅游飲食景觀的概念。即,能成為旅游吸引物,以飲食文化為主題而形成的具有明顯的外部感知特色和強(qiáng)烈地方感的環(huán)境綜合體。 (2)旅游飲食景觀由飲食景觀演進(jìn)而來(lái),經(jīng)歷了四個(gè)發(fā)展階段:命名階段、景觀范圍劃定和功能完善階段、品牌化階段、形象認(rèn)同階段。其內(nèi)在結(jié)構(gòu)包含三大要素:飲食、環(huán)境、活動(dòng),三者功能各異、相互影響、相輔相成。 (3)建立旅游飲食景觀評(píng)價(jià)模型。本文依據(jù)旅游飲食景觀的構(gòu)成,確定評(píng)價(jià)指標(biāo)體系,包括1個(gè)一級(jí)指標(biāo)(目標(biāo)層)、3個(gè)二級(jí)指標(biāo)(要素層)、14個(gè)三級(jí)指標(biāo)(指標(biāo)層),共同構(gòu)成因素集。運(yùn)用結(jié)構(gòu)方程模型處理專家問(wèn)卷數(shù)據(jù),得到指標(biāo)間的標(biāo)準(zhǔn)化路徑系數(shù),采用歸一化方法求得權(quán)重,形成權(quán)重集。進(jìn)而系統(tǒng)地運(yùn)用模糊綜合評(píng)判法,構(gòu)建了旅游飲食景觀的兩級(jí)模糊綜合評(píng)判模型,據(jù)此得出包含總體評(píng)價(jià)和要素評(píng)價(jià)的多層次評(píng)判模型。 (4)以盱眙龍蝦景觀和青島啤酒景觀為例,本文運(yùn)用旅游飲食景觀多層次模糊綜合評(píng)判模型,對(duì)二者進(jìn)行評(píng)價(jià)、比較,結(jié)果與實(shí)際情況基本吻合。實(shí)證研究表明,旅游飲食景觀評(píng)價(jià)模型具有科學(xué)性、合理性。據(jù)此,本文從四方面系統(tǒng)地探討了旅游飲食景觀設(shè)計(jì)與優(yōu)化的思路。
[Abstract]:Landscape is a regional complex, including a variety of forms of combination, diet and landscape has a natural relationship, it is rooted in a specific region, showing strong local characteristics, not only to meet the basic needs of survival, It is also from the aesthetic experience of life. Dietary landscape (foodscape) is a new field of landscape research. When it comes to tourism, its function changes and forms tourist diet landscape as a tourist attraction, which opens up a new idea for the theoretical research and practical application of tourism landscape. How to understand the tourist Diet Landscape? How to evaluate tourist Diet Landscape? How to optimize tourist Diet Landscape? It is a problem to be solved in the study of tourism food landscape. On the basis of summarizing the related research contents of dietary landscape, this paper formed a preliminary understanding of dietary landscape, and put forward the basic concept of tourism diet landscape after combing the concept system of landscape. The comprehensive application of multi-disciplinary theories such as tourism landscape theory, collective memory theory, communication theory, semiotics and so on provides a theoretical basis for exploring the forming process of tourism diet landscape. The interpretation of dietary landscape and the application of qualitative research methods (field observation and interview investigation) opened the way for analyzing the structure of tourist diet landscape. Through the questionnaire survey to obtain the basic data, pay attention to the combination of qualitative research (theoretical exploration) and quantitative research (structural equation model, fuzzy comprehensive evaluation method). In this paper, the evaluation index system of tourism food landscape and the multi-level fuzzy comprehensive evaluation model are constructed. This paper makes a comparative study on Xuyi lobster landscape and Tsing Tao Beer landscape by positivism. Finally, according to the results of empirical evaluation, the evaluation index system and weight of tourism diet landscape are used to further explore the way of design and optimization. The main conclusions of this paper are as follows: (1) based on the relevant theory, this paper defines the concept of tourism food landscape. That is, it can become a tourist attraction, with the theme of diet culture as the theme of the formation of a clear external perception of the characteristics and strong sense of the environment. (2) Tourism Diet landscape from the evolution of dietary landscape, It has gone through four stages: naming stage, landscape scope delineation and function perfection stage, brand stage, image identification stage. Its internal structure includes three major elements: diet, environment, activities, the three functions are different, mutual influence, complementary. (3) establish a tourism diet landscape evaluation model. According to the composition of tourist diet landscape, the evaluation index system is determined in this paper, including one primary index (target layer), three secondary indexes (element layer) and 14 third-level indexes (index layer), which together constitute the set of factors. The structure equation model is used to deal with the data of expert questionnaire, and the standardized path coefficient among the indexes is obtained, and the weight set is obtained by using the normalized method. Then the two-level fuzzy comprehensive evaluation model of tourism food landscape is constructed by using fuzzy comprehensive evaluation method. Based on this, a multi-level evaluation model including overall evaluation and element evaluation is obtained. (4) taking Xuyi lobster landscape and Tsing Tao Beer landscape as examples, this paper uses the multi-level fuzzy comprehensive evaluation model of tourism diet landscape to evaluate the two models. The results are in good agreement with the actual situation. The empirical study shows that the tourism diet landscape evaluation model is scientific and reasonable. On the basis of this, this paper systematically discusses the ideas of tourism diet landscape design and optimization from four aspects.
