【摘要】：本文從文化人類學的視角,對布里亞特具有特色的飲食文化進行了探究。論文由導論、布里亞特飲食種類及制作技藝,布里亞特飲食習俗、布里亞特飲食的文化解讀、結(jié)語、參考文獻、附錄等內(nèi)容組成。導論包括,研究狀況、選題目的、研究方法。第一章,布里亞特飲食的種類及制作技藝中,對象征美好的白食(奶食)、營養(yǎng)豐富的紅食(肉食)、獨具特色的紫食(面食)、新鮮美味的青食(果蔬)的種類與制作技藝進行了闡釋。第二章,布里亞特飲食習俗中,將布里亞特飲食習俗分為節(jié)慶飲食習俗、祭祀飲食習俗、民間療法飲食習俗等三種類型。同時重點分析了儀式宴會飲食習俗,查干薩日(年俗)飲食習俗,招福儀式飲食習俗,巫術(shù)療法飲食習俗中蘊含的獨特文化特性。第三章,布里亞特飲食的文化解讀中,從文化人類學視角將布里亞特飲食文化的特性,分為傳承性、創(chuàng)新性、社會性別屬性等特性進行了剖析。同時從自然資源環(huán)境促成布里亞特飲食文化的形成,生產(chǎn)生活習俗致使布里亞特飲食文化得以傳承,文化互動使得布里亞特飲食的創(chuàng)新等方面解讀了布里亞特飲食文化傳承創(chuàng)新的文化內(nèi)涵。結(jié)語,在總結(jié)論文內(nèi)容的基礎(chǔ)上,筆者提出了從布里亞特飲食傳承與特性來看,在社會變遷,現(xiàn)代化的背景下,生活方式發(fā)生了變化,但傳承民族文化的內(nèi)在心里特征沒有變化,從而使飲食文化在不同的社會環(huán)境中仍然能夠傳承的觀點。
[Abstract]:From the perspective of cultural anthropology, this paper explores Briat's characteristic food culture.The paper is composed of introduction, types and techniques of Buryat diet, Buryat eating custom, cultural interpretation, conclusion, reference, appendix and so on.The introduction includes, the research situation, the selected topic purpose, the research method.The first chapter is about the variety and craftsmanship of Buryat's diet.The varieties and craftsmanship of white food (milk food), red food (meat food), purple food (pasta food) and fresh and delicious green food (fruit and vegetable) are explained.In the second chapter, the Buryat dietary customs are divided into three types: festival eating customs, sacrificial eating customs and folk therapeutic eating customs.At the same time, the special cultural characteristics contained in ritual banquet, Chaganza Day (year's customs), blessing ritual and witchcraft therapy were analyzed.In the third chapter, from the perspective of cultural anthropology, the characteristics of Briat's diet culture are divided into inheritance, innovation, gender attributes and so on.At the same time, the natural resources and environment contributed to the formation of the food culture of Buryat, and the production and living customs resulted in the transmission of the food culture of Buryat.The cultural interaction makes the innovation of Buryat's diet and other aspects unscramble the cultural connotation of the cultural heritage and innovation of Briat's diet.In conclusion, on the basis of summing up the contents of the thesis, the author puts forward that, in the context of social change and modernization, the lifestyle has changed from the perspective of the inheritance and characteristics of Buryat's diet.However, there is no change in the internal mental characteristics of the national culture, so that the diet culture can still be passed on in different social environments.
