    前言：蘿卜絲干燥是蘿卜加工的重要環(huán)節(jié)。利用薄層干燥試驗(yàn)臺(tái) ,進(jìn)行蘿卜絲的薄層干燥試驗(yàn) ,探討熱風(fēng)溫度、風(fēng)速對(duì)干燥速率的影響。結(jié)果表明 ,蘿卜絲干燥具有典型物料干燥的升溫、等速、降速 3個(gè)階段 ,熱風(fēng)溫度對(duì)干燥速率的影響比風(fēng)速對(duì)干燥速率的影響顯著。用 BP神經(jīng)網(wǎng)絡(luò)建立蘿卜絲干燥的數(shù)學(xué)模型 ,并與 Page模型的模擬結(jié)果進(jìn)行對(duì)比。結(jié)果表明 ,用 BP神經(jīng)網(wǎng)絡(luò)預(yù)測(cè)的含水率比精度明顯高于 Page模型
    The experimental drying of turnip strips were car ried out in a thin-layer drying test rig and the effects of temperature and flo wrate of hot air on the drying rate were investigated.
