【摘要】：食品摻假種類眾多,手段隱蔽,成為食品安全檢測一個重要難題。為擺脫傳統(tǒng)模型識別食品中是否存在新?lián)郊兕悇e的局限性,實驗以純凈的靈芝孢子油和摻雜不同比例花生油、玉米油、薏仁油、地溝油的五種類別為研究對象,采用傅里葉變換近紅外光譜(Fourier transform near infrared spectroscopy,FT-NIR)收集12 400~4 000cm~(-1)范圍內(nèi)的近紅外光譜。假設(shè)摻雜地溝油為新?lián)郊兕悇e,利用前四種類別的校正集樣本構(gòu)建相關(guān)向量機(RVM)多分類器,分別對建模的預(yù)測集樣本和摻雜地溝油樣本進行判別,并借助新聚類算法對判別為純凈的靈芝孢子油的樣本做進一步分析驗證。研究表明,RVM分類器對于建模的預(yù)測集樣本判別準確率高達93.75%,說明模型有較強的判別能力,但由于模型局限性,摻雜地溝油樣品被誤判為純凈的靈芝孢子油;在新聚類算法的決策圖上,純凈靈芝孢子油校正集和預(yù)測集混合樣本的聚類中心數(shù)為1,而純凈靈芝孢子油校正集和摻雜了地溝油混合樣本聚類中心數(shù)為2,直觀驗證判別結(jié)果的準確性。結(jié)果表明利用FT-NIR技術(shù)結(jié)合RVM分類器與新聚類算法對于靈芝孢子油摻假能夠有效識別,并且能夠定性識別新型摻假類型,為解決食品摻假多樣化問題提供一種新思路。
[Abstract]:Food adulteration has become an important problem in food safety detection. In order to get rid of the limitation of traditional model to identify whether there is a new adulteration category in food, pure Ganoderma lucidum spores oil and peanut oil with different proportion were used in the experiment. Five kinds of corn oil, barley oil and gutter oil were studied. The near infrared spectra were collected in the range of 12 400 ~ 4 000 cm ~ (-1) by Fourier near infrared (FT-NIRR). The adulterated gutter oil was assumed to be a new adulterated category. The correlation vector machine (RVM) multi-classifier was constructed by using the first four kinds of calibration set samples, and the prediction set samples and the adulterated gutter oil samples were used to distinguish the predicted samples and the adulterated gutter oil samples, respectively. The new clustering algorithm is used to further analyze and verify the sample of Ganoderma lucidum spore oil which is pure. The research shows that the accuracy of the RVM classifier for the prediction set of the model is as high as 93.75, which shows that the model has a strong discriminant ability. However, due to the limitation of the model, the adulterated gutter oil sample was misjudged as pure Ganoderma lucidum spore oil. The cluster center number of mixed samples of pure Ganoderma lucidum spore oil correction set and prediction set is 1, while that of pure Ganoderma lucidum spore oil correction set and mixed samples doped with gutter oil is 2. The results show that FT-NIR combined with RVM classifier and new clustering algorithm can effectively identify the spores oil adulteration of Ganoderma lucidum. It can identify the new type of adulteration qualitatively and provide a new way to solve the problem of food adulteration.
