【摘要】：摘要：近年來(lái),隨著我國(guó)經(jīng)濟(jì)和社會(huì)的快速發(fā)展,農(nóng)業(yè)結(jié)構(gòu)的顯著調(diào)整和人們生活水平不斷提高,我國(guó)水產(chǎn)品等生鮮產(chǎn)品的消費(fèi)規(guī)�？焖僭鲩L(zhǎng),人們對(duì)水產(chǎn)品的多樣化、營(yíng)養(yǎng)性和保鮮性等提出了更高的要求,“多品種、小批量、高保鮮”已成為冷鏈物流的主要特點(diǎn)。但與發(fā)達(dá)國(guó)家相比我國(guó)冷鏈物流還存在冷鏈物流基礎(chǔ)設(shè)施嚴(yán)重不足、冷鏈流通比例偏低、冷鏈物流成本較高、冷鏈物流技術(shù)水平落后、行業(yè)標(biāo)準(zhǔn)和體系不健全等問(wèn)題,嚴(yán)重制約了我國(guó)水產(chǎn)品冷鏈物流的長(zhǎng)遠(yuǎn)發(fā)展。 本論文運(yùn)用精益價(jià)值流的思想來(lái)分析和探討水產(chǎn)品冷鏈物流的發(fā)展。論文重點(diǎn)運(yùn)用流程分析方法和價(jià)值流分析方法對(duì)水產(chǎn)品冷鏈物流的冷鏈流程和價(jià)值流進(jìn)行深入的分析和研究,歸納出水產(chǎn)品冷鏈物流中的浪費(fèi),并在此基礎(chǔ)上從生產(chǎn)管理、庫(kù)存管理、配送管理、質(zhì)量管理四個(gè)方面對(duì)水產(chǎn)品冷鏈物流的價(jià)值流進(jìn)行優(yōu)化和改進(jìn)。同時(shí),本文還通過(guò)實(shí)證案例研究,運(yùn)用價(jià)值流的分析工具價(jià)值流圖析對(duì)冷鏈加工企業(yè)A的凍鱈魚(yú)片加工生產(chǎn)進(jìn)行研究,繪制其價(jià)值流的現(xiàn)狀圖和未來(lái)狀態(tài)圖,并提出相應(yīng)的優(yōu)化和改進(jìn)措施。 本論文以“消除浪費(fèi)、降低成本、創(chuàng)造價(jià)值、持續(xù)改善”的價(jià)值思想為核心,結(jié)合水產(chǎn)品冷鏈物流的特點(diǎn),構(gòu)建了一條高效、安全和精益化的水產(chǎn)品冷鏈物流體系,并給出了發(fā)展精益水產(chǎn)品冷鏈物流的措施和建議。
[Abstract]:Abstract: in recent years, with the rapid development of our economy and society, the remarkable adjustment of agricultural structure and the continuous improvement of people's living standard, the consumption scale of fresh products such as aquatic products in China has increased rapidly, and people have diversified aquatic products. Nutrition and freshness have put forward higher requirements, "multi-variety, small batch, high fresh-keeping" has become the main characteristics of cold chain logistics. But compared with the developed countries, the cold chain logistics in our country still has some problems, such as the shortage of the cold chain logistics infrastructure, the low circulation ratio of the cold chain, the high cost of the cold chain logistics, the backward technical level of the cold chain logistics, the imperfect industry standards and system, etc. Seriously restricted our country aquatic product cold chain logistics long-term development. This paper analyzes and discusses the development of cold chain logistics of aquatic products by using the thought of lean value flow. In this paper, the process analysis method and value flow analysis method are used to analyze and study the cold chain flow and value flow of aquatic product cold chain logistics, and the waste in aquatic product cold chain logistics is concluded, and on this basis, the production management is introduced. Inventory management, distribution management and quality management optimize and improve the value flow of aquatic product cold chain logistics. At the same time, through the empirical case study, using the value flow analysis tool value flow graph analysis to the cold chain processing enterprise A frozen cod slice processing production, draw its value flow current situation and future state map. And put forward the corresponding optimization and improvement measures. Based on the value thought of "eliminating waste, reducing cost, creating value and continuously improving" and combining the characteristics of aquatic product cold chain logistics, this paper constructs an efficient, safe and lean aquatic product cold chain logistics system. The measures and suggestions for the development of cold chain logistics of lean aquatic products are also given.
