【摘要】：改革開放以來,經(jīng)濟(jì)得到了飛速發(fā)展,人們的生活水平和質(zhì)量也得到了較快的提高,但我國的環(huán)境問題卻沒有得到較好的改善,一直被認(rèn)為綠色產(chǎn)業(yè)、無污染的酒店業(yè)的環(huán)境問題也日益凸顯。由于人們消費觀念與飲食習(xí)慣的影響,我國酒店業(yè)在為顧客提供舒適環(huán)境、優(yōu)質(zhì)服務(wù)、帶動全國經(jīng)濟(jì)發(fā)展往往是以浪費大量物資、消耗各種能源、污染物的大量排放為條件。酒店空調(diào)器排放的濁氣、廚房排放的油煙、洗滌產(chǎn)生的污水、化學(xué)物質(zhì)等無不污染著我們賴以生存的環(huán)境。據(jù)環(huán)保部門統(tǒng)計,一家擁有150--180間客房的三星級酒店,一次性用品的年總費用約26-30萬人民幣,“富麗華大酒店”餐飲烹調(diào)油煙氣高達(dá)80000M3/hr�？梢�,酒店業(yè)造成的環(huán)境壓力并不比重工業(yè)小,因而酒店業(yè)的能耗、物耗、浪費與污染問題絕不容忽視,目前對酒店業(yè)環(huán)境問題的研究己成為研究界的熱點與重點。 為了改善酒店業(yè)的環(huán)境問題,“綠色經(jīng)營”、“清潔生產(chǎn)”等一個個新概念、新思想在酒店業(yè)廣為推崇,希望減少酒店生產(chǎn)經(jīng)營過程中物質(zhì)、能源的消耗與污染物、有毒化學(xué)物質(zhì)的排放等,企圖從源頭上改善酒店業(yè)的環(huán)境問題。另外,酒店業(yè)還引進(jìn)了“環(huán)境會計”,用數(shù)字定量的表述了酒店的環(huán)保資產(chǎn)情況、環(huán)境投資狀況以及三廢等污染物的排放及處理情況等。“環(huán)境會計”的引入利于酒店清晰的認(rèn)識自己的環(huán)境狀況和酒店間的比較,為酒店業(yè)環(huán)境業(yè)績的考核提供了可能性。 鑒于上述背景和條件,構(gòu)建酒店業(yè)環(huán)境業(yè)績評價體系,對其環(huán)境業(yè)績進(jìn)行考核,進(jìn)而減少環(huán)境污染、提高環(huán)境質(zhì)量是酒店業(yè)實現(xiàn)可持續(xù)發(fā)展的基礎(chǔ)。因而,本文在借鑒國內(nèi)外有關(guān)業(yè)績、環(huán)境業(yè)績及酒店業(yè)的研究基礎(chǔ)上,結(jié)合酒店業(yè)對環(huán)境的影響,構(gòu)建了我國酒店業(yè)環(huán)境業(yè)績評價體系。 本文在界定了環(huán)境業(yè)績、酒店業(yè)等相關(guān)概念后,分析了酒店業(yè)進(jìn)行環(huán)境業(yè)績評價的理論基礎(chǔ)：社會責(zé)任理論、契約理論和環(huán)境倫理理論,然后結(jié)合酒店業(yè)對環(huán)境的影響,闡述了酒店生產(chǎn)經(jīng)營過程中的環(huán)境問題,而論文的核心部分就是酒店業(yè)環(huán)境業(yè)績評價體系的構(gòu)建。本文在遵守目標(biāo)一致性、可比性等原則的基礎(chǔ)上從外部和內(nèi)部兩方面選取了我國酒店業(yè)環(huán)境業(yè)績評價的指標(biāo),并用模糊網(wǎng)絡(luò)法對各個指標(biāo)所占的比重進(jìn)行了客觀確定,從而建立了我國酒店業(yè)環(huán)境業(yè)績評價模型。 該模型的運用有利于酒店環(huán)境業(yè)績的橫向比較和縱向比較,從而發(fā)現(xiàn)酒店在經(jīng)營過程中所存在的環(huán)境問題,進(jìn)而找出解決環(huán)境問題、提高環(huán)境質(zhì)量的方案,最終實現(xiàn)酒店的可持續(xù)發(fā)展。
[Abstract]:Since the reform and opening up, the economy has developed rapidly, people's living standards and quality have also been improved rapidly, but the environmental problems in our country have not been improved better, and have been regarded as green industry. The environmental problems of the non-polluting hotel industry are also increasingly prominent. Because of the influence of people's consumption concept and eating habits, the hotel industry in our country is providing the customers with comfortable environment, high quality service, and driving the economic development of the country is often to waste a lot of goods and materials. Consumption of all kinds of energy and a large amount of pollutants is a condition. The turbid gas emitted by hotel air conditioners, oil fumes from the kitchen, sewage from washing, chemicals and so on, all pollute the environment on which we live. According to the statistics of the environmental protection department, A three-star hotel with 150-180 guest rooms has a total annual cost of disposable items of about 26-300 million yuan. The smoke of cooking oil from restaurants and cooking oil in the "Furihua Hotel" is as high as 80000M3 / 3 路hr. it can be seen that the environmental pressure caused by the hotel industry is not less than that caused by heavy industry. Therefore, the problems of energy consumption, material consumption, waste and pollution in hotel industry can not be ignored. In order to improve the environmental problems of the hotel industry, such new concepts as "green management" and "clean production" are widely advocated in the hotel industry. They hope to reduce the consumption of materials and energy and pollutants in the process of hotel production and operation. The emission of toxic chemicals and so on, in an attempt to improve the environmental problems in the hotel industry at the source. In addition, the hotel industry has also introduced "environmental accounting", which quantitatively describes the environmental protection assets of hotels. The introduction of "Environmental Accounting" is conducive to a clear understanding of the hotel's own environmental conditions and the comparison between hotels, which provides a possibility for the hotel industry to assess the environmental performance of the hotel industry. In view of the above background and conditions, it is the foundation for the hotel industry to achieve sustainable development by establishing an environmental performance evaluation system to assess its environmental performance, thereby reducing environmental pollution and improving environmental quality. Based on the research of domestic and foreign related achievements, environmental performance and hotel industry, this paper constructs an environmental performance evaluation system of China's hotel industry based on the influence of hotel industry on the environment. After defining the related concepts of environmental performance and hotel industry, this paper analyzes the theoretical basis of environmental performance evaluation in hotel industry: social responsibility theory, contract theory and environmental ethics theory, and then combines the impact of hotel industry on the environment. This paper expounds the environmental problems in the process of hotel production and management, and the core part of the paper is the construction of the environmental performance evaluation system of hotel industry. On the basis of the principles of comparability and so on, this paper selects the indicators of environmental performance evaluation of China's hotel industry from external and internal aspects, and uses fuzzy network method to objectively determine the proportion of each index. Thus, the environmental performance evaluation model of hotel industry in China is established. The application of this model is beneficial to the horizontal and vertical comparison of hotel's environmental performance, so as to find out the environmental problems existing in the hotel management process, and then find out the solutions to the environmental problems and improve the environmental quality. Finally, the sustainable development of the hotel will be realized.
