【摘要】:我國餐飲業(yè)特別是餐飲連鎖業(yè)的發(fā)展給藍(lán)槍魚的連鎖經(jīng)營管理帶來新的機(jī)遇,也面臨新挑戰(zhàn)和威脅。藍(lán)槍魚集團(tuán)自1999年成立以來,連鎖店和銷售額都得到迅速發(fā)展,但隨著內(nèi)外部環(huán)境的變化,藍(lán)槍魚集團(tuán)在發(fā)展餐飲連鎖經(jīng)營的過程中,也遇到了一些新問題,甚至出現(xiàn)了一些制約性因素。本文從國外發(fā)展現(xiàn)狀、國內(nèi)相關(guān)文獻(xiàn)等方面對國內(nèi)外餐飲連鎖經(jīng)營管理進(jìn)行了綜述。并以藍(lán)槍魚集團(tuán)餐飲連鎖經(jīng)營為例,通過問卷調(diào)查、現(xiàn)場走訪、數(shù)據(jù)分析、實地考察等形式,對藍(lán)槍魚餐飲連鎖經(jīng)營管理的現(xiàn)狀進(jìn)行分析、研究,梳理藍(lán)槍魚餐飲連鎖經(jīng)營管理中存在的問題和不足、優(yōu)勢和劣勢、機(jī)會和威脅,綜合提出了戰(zhàn)略規(guī)劃不明晰、網(wǎng)點(diǎn)分布散、發(fā)展遇瓶頸、內(nèi)控不嚴(yán)格等方面的問題。最后,本文結(jié)合藍(lán)槍魚集團(tuán)餐飲連鎖經(jīng)營管理實際,從進(jìn)一步明確戰(zhàn)略規(guī)劃戰(zhàn)略定位、加強(qiáng)資源保障措施、完善業(yè)務(wù)板塊結(jié)構(gòu)、加強(qiáng)內(nèi)部控制管理等方面給出了進(jìn)一步發(fā)展藍(lán)槍魚集團(tuán)餐飲連鎖經(jīng)營的路徑,為我國小型餐飲企業(yè)開展連鎖經(jīng)營提供了可資借鑒的依據(jù)。
[Abstract]:The development of catering industry in China, especially the chain food industry, has brought new opportunities, challenges and threats to the chain management of blue marlin. Since its establishment in 1999, the chain stores and sales volume of Blue Marlin Group have developed rapidly. However, with the change of internal and external environment, Blue Marlin Group also encountered some new problems and even some restrictive factors in the process of developing restaurant chain operation. This paper summarizes the domestic and foreign restaurant chain management in China and abroad, and takes the restaurant chain management of Blue Marlin Group as an example. Through questionnaire investigation, field visit, data analysis, field investigation and so on, The present situation of the restaurant chain management of blue marlin was analyzed, and the problems, disadvantages, advantages and disadvantages, opportunities and threats in the chain management of the restaurant chain of blue marlin were analyzed, and the strategic planning was not clear and the distribution of the outlets was scattered. Finally, combining with the practice of restaurant chain operation and management of Blue Marlin Group, this paper further clarifies the strategic position of strategic planning, strengthens the measures of resource guarantee, and consummates the business plate structure. The ways to further develop the restaurant chain operation of Blue Marlin Group are given in the aspects of strengthening internal control and management, which can be used as a reference for the small catering enterprises in our country to carry out chain operation.
