【摘要】：“夫禮之初,始諸飲食”，中國(guó)餐飲文化可謂博大精深,源遠(yuǎn)流長(zhǎng)。隨著我國(guó)改革開放34年，國(guó)內(nèi)餐飲業(yè)水平的逐步提高，全國(guó)各省市“中華美食名城”“中華美食名鎮(zhèn)”相繼出現(xiàn)。隨著我國(guó)城市化進(jìn)程的迅速發(fā)展，城市文化特色越來(lái)越受到各界的關(guān)注，作為城市社會(huì)、文化、經(jīng)濟(jì)、旅游等的重要體現(xiàn)因素——餐飲，則成為各城市突出其城市文化特色的重要指標(biāo)，城市餐飲產(chǎn)業(yè)集群也應(yīng)運(yùn)而生，其對(duì)城市的空間形態(tài)以及城市空間結(jié)構(gòu)將產(chǎn)生深遠(yuǎn)的影響。作為餐飲產(chǎn)業(yè)活動(dòng)的容器——城市餐飲產(chǎn)業(yè)集群的規(guī)劃設(shè)計(jì)作為研究對(duì)象，具有其前瞻性，并對(duì)未來(lái)城市餐飲產(chǎn)業(yè)集群的空間形態(tài)特征、空間結(jié)構(gòu)發(fā)展、餐飲文化特性的表現(xiàn)、集群內(nèi)部空間的科學(xué)合理規(guī)劃設(shè)計(jì)等有其參考價(jià)值。 論文共分為八章： 第一章，分析論文的研究背景、目的與意義，提出論文的研究?jī)?nèi)容、方法以及結(jié)構(gòu)； 第二章，闡述了城市餐飲產(chǎn)業(yè)集群相關(guān)基礎(chǔ)理論，包括我國(guó)餐飲文化、產(chǎn)業(yè)集群、城市餐飲產(chǎn)業(yè)集群模式、空間形態(tài)等概念； 第三章，分析國(guó)內(nèi)外城市餐飲產(chǎn)業(yè)集群的發(fā)展歷程、現(xiàn)狀概況以及相關(guān)案例，從而總結(jié)城市餐飲產(chǎn)業(yè)集群現(xiàn)狀問(wèn)題，為廣州市餐飲產(chǎn)業(yè)集群規(guī)劃建設(shè)提供了借鑒； 第四章，通過(guò)廣州市餐飲產(chǎn)業(yè)集群現(xiàn)狀進(jìn)行概述，從而分析闡述其空間形態(tài)布局、空間格局、形成機(jī)理、開發(fā)特征等廣州市餐飲產(chǎn)業(yè)集群特征； 第五章，利用在重大事件的契機(jī)，廣州城市餐飲產(chǎn)業(yè)集群迅速發(fā)展概述，并進(jìn)行個(gè)案選取及深入分析； 第六章，結(jié)合上述研究，通過(guò)SWOT分析方法，提出廣州市城市餐飲產(chǎn)業(yè)集群的總體規(guī)劃策略與設(shè)計(jì)探討的相關(guān)建議； 第七章，，工程實(shí)例； 最后，對(duì)全文的總結(jié)以及對(duì)未來(lái)城市餐飲產(chǎn)業(yè)集群規(guī)劃建設(shè)發(fā)展的展望。 本文希望通過(guò)對(duì)廣州城市餐飲產(chǎn)業(yè)集群的規(guī)劃宏觀層面以及規(guī)劃微觀層面進(jìn)行相關(guān)的研究，從城市規(guī)劃的角度把握城市餐飲產(chǎn)業(yè)集群規(guī)劃建設(shè)中的策略與探討。通過(guò)此論文對(duì)廣州市城市餐飲產(chǎn)業(yè)集群在城市規(guī)劃建設(shè)中有其借鑒意義，并對(duì)城市餐飲產(chǎn)業(yè)集群的發(fā)展有其推動(dòng)作用。
[Abstract]:With the reform and opening up of our country for 34 years, the level of domestic catering industry has been gradually improved. With the rapid development of urbanization in China, the characteristics of urban culture have been paid more and more attention by all walks of life, as a city society and culture. Catering, an important factor of economy and tourism, has become an important indicator for cities to highlight their urban cultural characteristics, and the city catering industry cluster has emerged as the times require. As a container of catering industry activities, the planning and design of urban catering industry cluster as the research object, has its foresight. It also has its reference value to the future urban catering industry cluster's spatial form characteristic, the spatial structure development, the dining culture characteristic performance, the scientific and reasonable planning and design of the cluster interior space, etc. The thesis is divided into eight chapters: The first chapter analyzes the research background, purpose and significance of the paper, and puts forward the research content, method and structure of the paper. The second chapter expounds the basic theories of urban catering industry cluster, including the concept of catering culture, industrial cluster, urban catering industry cluster model, spatial form and so on. The third chapter analyzes the development of urban catering industry cluster at home and abroad, the current situation and related cases, so as to summarize the status quo of urban catering industry cluster. It provides reference for the planning and construction of catering industry cluster in Guangzhou. Chapter 4th summarizes the status quo of Guangzhou catering industry cluster, and then analyzes the characteristics of Guangzhou catering industry cluster, such as its spatial form layout, spatial pattern, formation mechanism, development characteristics and so on. Chapter 5th, taking advantage of the opportunity in the major events, Guangzhou City Catering Industry Cluster rapid development overview, and the case selection and in-depth analysis; Chapter 6th, combined with the above research, through the SWOT analysis method, put forward the overall planning strategy and design of Guangzhou City Catering Industry Cluster. Chapter 7th, engineering examples; Finally, the summary of the full text and the prospect of the planning and construction of urban catering industry cluster in the future. This article hopes to carry on the related research through the planning macroscopic level and the planning microscopic level of Guangzhou city catering industry cluster. From the point of view of urban planning, we can grasp the strategy and discussion of the planning and construction of urban catering industry cluster. Through this paper, we can use it for reference in the urban planning and construction of Guangzhou city catering industry cluster. And the development of urban catering industry cluster has its role.
