重慶市餐飲業(yè)競(jìng)爭(zhēng)力評(píng)價(jià)與提升對(duì)策研究

【摘要】:隨著經(jīng)濟(jì)全球化形式的不斷升溫,我國(guó)經(jīng)濟(jì)的高速發(fā)展,第三產(chǎn)業(yè)的地位逐步上升,人們對(duì)高品質(zhì)生活的追求越來(lái)越強(qiáng)烈,餐飲業(yè)的發(fā)展也越發(fā)受到政府以及學(xué)術(shù)界的廣泛關(guān)注,經(jīng)濟(jì)全球化所必然帶來(lái)的市場(chǎng)化和區(qū)域化的趨勢(shì)使餐飲業(yè)亦愈發(fā)受到地方政府的重視。本文選取重慶市餐飲業(yè)為研究對(duì)象,結(jié)合產(chǎn)業(yè)經(jīng)濟(jì)學(xué)理論、區(qū)域經(jīng)濟(jì)學(xué)理論、競(jìng)爭(zhēng)理論、消費(fèi)理論以及餐飲業(yè)的相關(guān)理論知識(shí),借鑒波特的鉆石理論模型、IMD國(guó)際競(jìng)爭(zhēng)力統(tǒng)計(jì)評(píng)價(jià)模型、直接——間接競(jìng)爭(zhēng)力模型、三力體系模型等,對(duì)影響餐飲業(yè)競(jìng)爭(zhēng)力的有關(guān)因素進(jìn)行深入探討,構(gòu)建評(píng)價(jià)餐飲業(yè)競(jìng)爭(zhēng)力的分析模型,選取可表現(xiàn)出需求條件、關(guān)聯(lián)產(chǎn)業(yè)、生產(chǎn)要素等的人均地區(qū)生產(chǎn)總值、城鎮(zhèn)人均可支配收入、城鎮(zhèn)人口比重、第三產(chǎn)業(yè)生產(chǎn)總值、食品工業(yè)總產(chǎn)值、餐飲業(yè)零售總額、餐飲業(yè)從業(yè)人數(shù)、餐飲網(wǎng)點(diǎn)數(shù)以及住宿業(yè)營(yíng)業(yè)額、旅游外匯收入等28個(gè)指標(biāo),,通過(guò)層次分析法對(duì)指標(biāo)進(jìn)行權(quán)重賦予,并將指標(biāo)值予以標(biāo)準(zhǔn)化,再結(jié)合標(biāo)準(zhǔn)化后所得指標(biāo)數(shù)據(jù),運(yùn)用綜合分析法對(duì)重慶、北京、天津和上海四個(gè)直轄市的餐飲業(yè)競(jìng)爭(zhēng)力進(jìn)行分析評(píng)價(jià)。通過(guò)分析,明確重慶市餐飲業(yè)發(fā)展中存在的問(wèn)題,提出重慶市餐飲業(yè)競(jìng)爭(zhēng)力的提升對(duì)策。
[Abstract]:With the increasing of economic globalization and the rapid development of our economy, the status of the tertiary industry is gradually rising, and the pursuit of high-quality life is becoming more and more intense. The development of catering industry has also been paid more and more attention by the government and academia. The trend of marketization and regionalization brought by economic globalization makes the catering industry more and more valued by the local government. This paper selects Chongqing catering industry as the research object and combines the theory of industrial economics. Regional economics theory, competition theory, consumption theory and related theoretical knowledge of catering industry, using Porter's diamond theory model IMD international competitiveness statistical evaluation model, direct-indirect competitiveness model. The three forces system model, etc., deeply discusses the factors affecting the competitiveness of the catering industry, constructs an analytical model to evaluate the competitiveness of the catering industry, and selects the relevant industries to show the demand conditions. The per capita regional gross domestic product of factors of production, the per capita disposable income of cities and towns, the proportion of urban population, the gross output value of the tertiary industry, the gross output value of the food and beverage industry, the total retail sales of the catering industry, and the number of the catering industry employees. Food and beverage outlets as well as the turnover of the accommodation industry, tourism foreign exchange income and other 28 indicators, through the Analytic hierarchy process to give weight to the indicators, and the index values to be standardized, and then combined with standardized index data. The competitiveness of catering industry in Chongqing, Beijing, Tianjin and Shanghai is analyzed and evaluated by comprehensive analysis. Through the analysis, the problems existing in the development of catering industry in Chongqing are clarified. The countermeasures to enhance the competitiveness of catering industry in Chongqing are put forward.
