【摘要】：我國(guó)已進(jìn)入老齡化社會(huì),是世界上老年人口最多的國(guó)家。廚房作為老年人居家養(yǎng)老過程中使用頻率最高的空間之一,其重要性不言而喻。但目前老年人廚房仍存在許多問題,如設(shè)計(jì)不便利、輔助器具不匹配、操作不流暢等,難以滿足老年人獨(dú)立自主生活。本課題首先從我國(guó)的老齡化現(xiàn)狀出發(fā),分析國(guó)內(nèi)外老年人廚房的設(shè)計(jì)研究現(xiàn)狀,確定了適老性廚房的目標(biāo)用戶,即自理老人、助行器老人、輪椅老人。其次,從交互行為、現(xiàn)代廚房研究、老年人特征這三個(gè)方面,對(duì)文獻(xiàn)和理論進(jìn)行總結(jié),用于指導(dǎo)后續(xù)工作。接下來,對(duì)三類用戶的廚房交互行為進(jìn)行研究,分析用戶手部與頭部在儲(chǔ)存區(qū)(吊柜)、儲(chǔ)存區(qū)(地柜)、洗漱區(qū)、備餐區(qū)、烹飪區(qū)、整體行為動(dòng)線這六個(gè)方面的交互行為,定性總結(jié)出三類用戶的適老性廚房設(shè)計(jì)準(zhǔn)則。然后,探究用戶行為的內(nèi)在本質(zhì)和心理因素,通過獲取廚房設(shè)計(jì)因子、篩選廚房設(shè)計(jì)因子、構(gòu)建因子間層次結(jié)構(gòu),利用層次分析法和主成分分析法來計(jì)算需求權(quán)重值,獲得三類用戶的廚房需求差異。最后,根據(jù)上述研究成果,將理論研究應(yīng)用到實(shí)踐中,設(shè)計(jì)了“L型適老性廚房”和“Tai Chi概念廚房”兩個(gè)案例,其設(shè)計(jì)流程和研究方法,可為適老性廚房及其相關(guān)領(lǐng)域提供參考。
[Abstract]:Our country has entered the aging society, is the world's most populous country in the elderly. As one of the highest frequency of use of the kitchen space of the elderly home care, its importance is self-evident. But the elderly kitchen there are still many problems, such as the design is not convenient, auxiliary device with no matching operation is not smooth, it is difficult to meet the the elderly life. Firstly, independent from the aging situation of our country, analysis of the current situation of design and research at home and abroad old kitchen, the kitchen suitable for the old target user, namely the elderly themselves walkers, old people, the elderly wheelchair. Secondly, from the interactive behavior, modern kitchen research, three on the characteristics of the elderly, the literature and the theory are summarized, for follow-up work. Then, on the kitchen interactive behavior of three kinds of users, users of hand and head in the storage area, storage area (cabinet) (cabinet), washing area, cooking area, food preparation areas, the overall behavior of dynamic interactive behavior in these six aspects, summarizes three kinds of qualitative user suitable for the old kitchen design criterion. Then, the inherent nature and psychological factors on the behavior of users, through access to kitchen design, kitchen design factor, screening factor, construction the factor hierarchy analysis method to calculate the demand weights using the analytic hierarchy process and principal component, the kitchen needs of different three kinds of users. Finally, according to the research results, the application of theory to practice, the design of the L type suitable for the old kitchen "and" Tai Chi kitchen "concept in two cases the design, process and research method, which can provide a reference for the old fitness kitchen and related fields.
