【摘要】：乳業(yè)是我國(guó)處于快速發(fā)展階段的朝陽(yáng)產(chǎn)業(yè),乳制品營(yíng)養(yǎng)成分齊全,已逐漸成為人們?nèi)粘ｏ嬘玫闹匾称贰Ｈ闃I(yè)貫穿畜牧業(yè)、制造業(yè)和流通業(yè)三大產(chǎn)業(yè)部門,從原料奶生產(chǎn)到終端用戶的供應(yīng)鏈長(zhǎng)且復(fù)雜,在為消費(fèi)者提供終端產(chǎn)品的同時(shí),也帶動(dòng)了相關(guān)產(chǎn)業(yè)的發(fā)展。近年來(lái),隨著人們生活水平的提高和消費(fèi)觀念的轉(zhuǎn)變,乳品銷售量逐年提高,此種現(xiàn)象為乳業(yè)的發(fā)展創(chuàng)造了很好的機(jī)會(huì),使得我國(guó)乳業(yè)得到了極大的發(fā)展,市場(chǎng)份額逐年增加,現(xiàn)已成為地方經(jīng)濟(jì)中最具活力的產(chǎn)業(yè)之一。但是,在發(fā)展的過(guò)程中,出現(xiàn)了奶源戰(zhàn)、價(jià)格戰(zhàn)和乳制品質(zhì)量安全等問(wèn)題,這些問(wèn)題折射出了乳品供應(yīng)鏈運(yùn)作的無(wú)效率,沒(méi)有充分發(fā)揮出供應(yīng)鏈應(yīng)有的優(yōu)勢(shì),使其成為了我國(guó)乳業(yè)發(fā)展的瓶頸。因此,找出致使乳品供應(yīng)鏈低效率的根源,提出相應(yīng)的解決方案,對(duì)于促進(jìn)我國(guó)乳業(yè)健康可持續(xù)發(fā)展具有重要的政策意義。 為此,本文對(duì)乳品供應(yīng)鏈的效率進(jìn)行了深入的研究,針對(duì)現(xiàn)有研究中對(duì)乳品供應(yīng)鏈以及供應(yīng)鏈效率問(wèn)題的探討主要集中在定性分析方面的現(xiàn)狀,在對(duì)供應(yīng)鏈基礎(chǔ)知識(shí)、效率評(píng)價(jià)方法、DEA方法的理論背景和乳品供應(yīng)鏈各階段的現(xiàn)狀進(jìn)行系統(tǒng)闡述的基礎(chǔ)上,考慮到乳品供應(yīng)鏈結(jié)構(gòu)的特殊性,設(shè)計(jì)出了一套由原料奶生產(chǎn)階段和乳制品加工階段組成的兩級(jí)乳品供應(yīng)鏈效率評(píng)價(jià)的指標(biāo)體系,并且引入網(wǎng)絡(luò)數(shù)據(jù)包絡(luò)分析(網(wǎng)絡(luò)DEA)建模的方法構(gòu)建出了兩級(jí)乳品供應(yīng)鏈效率評(píng)價(jià)模型,以及對(duì)兩級(jí)乳品供應(yīng)鏈進(jìn)行有效DEA前沿面的推導(dǎo),均以我國(guó)31個(gè)省(自治區(qū)、直轄市)的兩級(jí)乳品供應(yīng)鏈為研究對(duì)象進(jìn)行實(shí)證分析或檢驗(yàn),通過(guò)演算的結(jié)果和對(duì)照研究,找出供應(yīng)鏈低效率的原因和改進(jìn)方向,并且提出改進(jìn)我國(guó)兩級(jí)乳品供應(yīng)鏈效率的政策與建議。
[Abstract]:Dairy industry is a sunrise industry in the stage of rapid development in China. Dairy products with complete nutritional components have gradually become an important food for people to drink. Dairy industry runs through animal husbandry, manufacturing industry and circulation industry. The supply chain from raw milk production to end-user is long and complex, which not only provides end products for consumers, but also promotes the development of related industries. In recent years, with the improvement of people's living standard and the change of consumption concept, the dairy sales volume has been increasing year by year. This phenomenon has created a good opportunity for the development of dairy industry, which makes the dairy industry of our country get great development, and the market share increases year by year. It has become one of the most dynamic industries in the local economy. However, in the process of development, there are problems such as milk source war, price war and dairy product quality and safety. These problems reflect the inefficiency of dairy supply chain operation, and do not give full play to the advantages of supply chain. It has become the bottleneck of the development of dairy industry in China. Therefore, it is of great policy significance to find out the causes of the inefficiency of dairy supply chain and put forward the corresponding solutions to promote the healthy and sustainable development of dairy industry in China. Therefore, this paper makes a deep research on the efficiency of dairy supply chain, focusing on the present situation of qualitative analysis and the basic knowledge of supply chain, aiming at the existing research on dairy supply chain and supply chain efficiency. The efficiency evaluation method, the theoretical background of DEA method and the current situation of dairy supply chain are systematically expounded, considering the particularity of dairy supply chain structure. An index system for evaluating the efficiency of a two-level dairy supply chain is designed, which is composed of raw milk production stage and dairy processing stage. The efficiency evaluation model of two-level dairy supply chain is constructed by introducing network data envelopment analysis (DEA) modeling method, and the efficient DEA frontier derivation of two-level dairy supply chain is derived from 31 provinces (autonomous regions) in China. The two-level dairy supply chain of the municipality directly under the Central Government is the research object to carry on the empirical analysis or the test, through the calculation result and the contrast research, finds out the supply chain low efficiency reason and the improvement direction, And put forward the policy and suggestion to improve the efficiency of two-level dairy supply chain in our country.
