【摘要】:我國是農(nóng)業(yè)大國,蔬菜質(zhì)量安全問題不僅是廣大人民群眾關(guān)心的熱點(diǎn),也是各級(jí)政府工作的重點(diǎn)。當(dāng)前,我國農(nóng)產(chǎn)品質(zhì)量安全存在的問題很多,如供應(yīng)鏈各環(huán)節(jié)分散、產(chǎn)品無標(biāo)識(shí)、質(zhì)量安全信息不對(duì)稱等,這使得消費(fèi)者無法辨別產(chǎn)品的質(zhì)量,產(chǎn)品質(zhì)量出現(xiàn)問題也很難追究責(zé)任。為了保障食品質(zhì)量安全,并提高農(nóng)產(chǎn)品生產(chǎn)、加工的整體運(yùn)作效率,亟須建立一套覆蓋全供應(yīng)鏈的可追溯體系。 本文從蔬菜供應(yīng)鏈涉及的各環(huán)節(jié)入手,結(jié)合萊蕪當(dāng)?shù)靥攸c(diǎn)和多個(gè)企業(yè)實(shí)地調(diào)研情況,對(duì)“種植基地+加工企業(yè)+物流”的供應(yīng)鏈模式進(jìn)行了深入研究。在分析供應(yīng)鏈各環(huán)節(jié)溯源信息內(nèi)容、溯源編碼方案以及信息可靠傳遞等問題的基礎(chǔ)上,提出了蔬菜供應(yīng)鏈溯源模型,并利用物聯(lián)網(wǎng)技術(shù)、Web網(wǎng)站開發(fā)技術(shù)和數(shù)據(jù)庫技術(shù),構(gòu)建了從種植、加工、運(yùn)輸?shù)戒N售全過程的可追溯系統(tǒng)。系統(tǒng)綜合考慮了追溯體系中政府、上下游企業(yè)以及消費(fèi)者之間的相互關(guān)系,將溯源融于企業(yè)管理,并強(qiáng)調(diào)政府在產(chǎn)業(yè)鏈中的監(jiān)管職能。具體研究?jī)?nèi)容以及研究成果如下: (1)基于供應(yīng)鏈的蔬菜質(zhì)量安全溯源內(nèi)容研究 蔬菜供應(yīng)鏈各個(gè)環(huán)節(jié)中影響質(zhì)量安全的因素很多,不同企業(yè)間生產(chǎn)的差異性也很大,需要根據(jù)相關(guān)的生產(chǎn)、加工標(biāo)準(zhǔn)和法律法規(guī),對(duì)蔬菜供應(yīng)鏈上的質(zhì)量安全關(guān)鍵控制點(diǎn)進(jìn)行研究確定,并根據(jù)質(zhì)量安全關(guān)鍵控制點(diǎn)來確定供應(yīng)鏈溯源內(nèi)容。 (2)蔬菜供應(yīng)鏈溯源模型研究 通過對(duì)現(xiàn)有溯源標(biāo)識(shí)體系的研究,確定了蔬菜供應(yīng)鏈的溯源編碼。在供應(yīng)鏈溯源編碼確定的基礎(chǔ)上,重點(diǎn)研究了供應(yīng)鏈各環(huán)節(jié)之間溯源信息的共享及可靠傳遞機(jī)制。并結(jié)合有向連通圖的相關(guān)理論,提出了蔬菜供應(yīng)鏈溯源模型。進(jìn)而實(shí)現(xiàn)了溯源信息的正向跟蹤和逆向追溯,并確保了供應(yīng)鏈信息流的無縫聯(lián)通。 (3)基于供應(yīng)鏈的蔬菜質(zhì)量安全溯源系統(tǒng)設(shè)計(jì)及實(shí)現(xiàn) 在對(duì)蔬菜供應(yīng)鏈溯源內(nèi)容和溯源模型研究的基礎(chǔ)上,結(jié)合企業(yè)需求調(diào)研,完成了整個(gè)溯源系統(tǒng)的概要設(shè)計(jì)和詳細(xì)設(shè)計(jì),并設(shè)計(jì)了各個(gè)階段的數(shù)據(jù)表和數(shù)據(jù)關(guān)系。采用S2SH整合開發(fā)技術(shù)、jQuery技術(shù)、Android開發(fā)技術(shù)和物聯(lián)網(wǎng)技術(shù),利用MySQL數(shù)據(jù)庫、Tomcat服務(wù)器,建立了基于供應(yīng)鏈的蔬菜質(zhì)量安全溯源系統(tǒng)。系統(tǒng)包含系統(tǒng)管理、基地管理、種植管理、質(zhì)量檢測(cè)管理、地窖管理、冷庫管理、腌制池管理、物料管理、保鮮類產(chǎn)品管理、脫水類產(chǎn)品管理、腌制類產(chǎn)品管理、物流管理、溯源追溯、政府監(jiān)管等十四個(gè)功能模塊,可為供應(yīng)鏈中的上下游企業(yè)、政府和消費(fèi)者提供服務(wù)。
[Abstract]:China is a big agricultural country. The problem of vegetable quality and safety is not only the focus of the people's attention, but also the focus of the government at all levels.At present, there are many problems existing in the quality and safety of agricultural products in our country, such as the fragmentation of supply chain links, the lack of marking of products, the asymmetry of quality and safety information, and so on, which makes consumers unable to distinguish the quality of products.Product quality problems are also very difficult to be held accountable.In order to ensure the safety of food quality and improve the production and processing efficiency of agricultural products, it is urgent to establish a traceability system covering the whole supply chain.Based on the local characteristics of Laiwu and the field investigation of many enterprises, the supply chain model of "Logistics of processing Enterprises based on planting Base" was studied in this paper.Based on the analysis of traceability information content, traceability coding scheme and reliable transmission of information in supply chain, the traceability model of vegetable supply chain is put forward, and the Web website development technology and database technology are developed by using the technology of Internet of things.A traceability system from planting, processing, transportation to sales is constructed.The relationship among the government, upstream and downstream enterprises and consumers in the traceability system is considered synthetically. The traceability is integrated into the enterprise management, and the supervisory function of the government in the industrial chain is emphasized.The specific contents and results of the study are as follows:Research on traceability of vegetable quality and Safety based on supply chainThere are many factors that affect quality and safety in every link of vegetable supply chain, and the differences of production among different enterprises are also very large, which need to be based on relevant production, processing standards and laws and regulations.The key control points of quality and safety in vegetable supply chain are studied and the traceability content of supply chain is determined according to the key control points of quality and safety.Study on traceability Model of vegetable supply chainThe traceability coding of vegetable supply chain is determined by studying the existing traceability marking system.Based on the determination of traceability coding of supply chain, this paper focuses on the sharing and reliable transmission mechanism of traceability information among different links of supply chain.The traceability model of vegetable supply chain is proposed based on the related theory of directed connected graph.Furthermore, the forward tracking and reverse tracing of traceability information are realized, and the seamless connection of supply chain information flow is ensured.Design and implementation of vegetable quality and Safety traceability system based on supply chainBased on the research on the traceability content and traceability model of vegetable supply chain, the summary design and detailed design of the whole traceability system are completed, and the data tables and data relationships in each stage are designed.Based on MySQL database and Tomcat server, a vegetable quality and safety traceability system based on supply chain is established by using S2SH integrated development technology, Android development technology and Internet of things technology.The system includes system management, base management, planting management, quality inspection management, cellar management, cold storage management, pickling pool management, material management, fresh-keeping product management, dehydration product management, marinade product management, logistics management, etc.Traceability, government supervision and other 14 functional modules can provide services for upstream and downstream enterprises, governments and consumers in the supply chain.
